* 올리면서 보다 보니까 육포 먹고 싶네요. [오늘 점심엔 뭘 먹을까?] 다양하고 맛있는 음식은 인간이 살아가면서 누리는 큰 즐거움 중 하나입니다. 군인이 되어도 이 즐거움은 달라지지 않죠. 오히려 정신을 딴 데 돌리기 위해, 쉬면서 스트레스를 해소하기 위해서라도 다양하고 맛있는데 양도 많고, 칼로리도 엄청난 음식을 원하게 됩니다. 그래서 입대한 군인들이 평소에는 거들떠보지 않던 PX의 냉동식품과 초코파이에 환장하는 것입니다. 전쟁이라도 나면 음식의 가치는 더 올라갑니다. 프랑스의 군인 황제 나폴레옹은 군대는 위장으로 싸운다고 말했습니다. 그 말대로 배고파 제대로 걷지도 못하는 군인에게 승리를 기대하는 일은 아무래도 무리겠죠. 따라서 각국은 자국의 현실에 맞춰 최대한 식단을 구성하고, 전투식량을 마련해 보급했습니다. 이번 화에는 고대부터 제2차세계대전까지 군인들에게 휴식처럼, 때로는 선물처럼, 때로는 저주처럼 다가왔던 전투식량에 대해 살펴보겠습니다. [탈수, 훈제, 염장] 고대부터 인간은 음식을 어떻게 저장해야 좋을지 많이 고민했습니다. 사냥에 성공했거나, 가을 같은 추수기에 대량으로 생기는 음식은 일부 곡식을 제외하면 보관을 잘해도 곧 상하거나 썩었습니다. 사람이 먹을 수 있는 음식은 당연히 미생물과 세균도 먹을 수 있고, 음식에 포함된 수분은 대량으로 번식하기 좋은 환경을 제공하기 때문입니다. 고대인들은 고민하다가 햇볕에 말리든가, 연기를 쐬어서 세균을 죽이거나, 항균력을 제공하는 향신료를 섞거나 소금을 잔뜩 뿌리는 염장법을 개발해서 이에 대처했습니다. 말리면 수분이 없는 음식은 그대로 휴대하며 먹었습니다. 해서 나온 전투식량이 바로 미숫가루와 건빵, 육포, 베이컨, 말린 물고기입니다. [미숫가루] 미숫가루, 즉 미수는 쪄낸 쌀이나 찹쌀을 말려 볶은 다음 가루로 빻으면 끝입니다. 수분이 없어서 썩지 않고, 부피가 적어 휴대가 간편하면서 물에 타서 바로 마시면 한 끼 식사를 마칠 수 있다는 동북아시아권에서는 인기 있는 간이 식품이었습니다. 같은 목적으로 쓰던 떡보다 만들기가 더 편했죠. 우리나라는 <조선왕조실록> 1461년 11월 27일 세조가 북방 국경 지역 수비군들에게 우비와 미숫가루를 충분히 확보할 것을 지시한 내용이 있습니다. 중국 기록에는 16세기 명나라 장수 척계광이 쓴 병서 <기효신서>에 미숫가루가 나옵니다. 척계광은 1530년대 중국 동남부를 휩쓴 일본 왜구와 싸워, 이를 성공적으로 퇴치한 명장입니다. 그는 소수정예 인원으로 기동력 있게 약탈과 후퇴를 반복하는 왜구를 쫓기 위해 정예 병사를 조직하면서 전투식량으로 미숫가루를 선택했습니다. 몽고도 1570년경 미스가라라는 이름으로 미숫가루의 형제 격인 음식을 먹었습니다. 미스가라는 콩가루에 말젖으로 만든 버터와 마유를 조금씩 넣어서 떡처럼 뭉쳐 먹는 음식입니다. 명나라와 몽고가 전쟁을 멈추고 교역을 시작하면서, 교역관에 모여 살던 명나라인의 미숫가루를 보고 이를 자국 사정과 입맛에 걸맞게 바꾸었습니다. [건빵] 파이어 케이크라는 이름으로 시작한 초기 건빵은 다른 향신료 없이 밀가루를 불에 구워 딱딱하게 만든 음식이었습니다. 불길이 일정하지 않으므로 겉은 딱딱하지만 속은 설익은 경우가 많았고, 안까지 익히려다가 겉면을 태우는 경우도 흔했습니다. 그래도 어떡해요. 이것밖에 없다면 불평 말고 먹어야죠, 뭐. 좀 더 발전한 건빵은 이스트로 부드러운 식감을 주었으며 여기에 약간의 설탕과 소금, 버터 등 지방을 첨가했습니다. 이때의 건빵은 크래커와 조리법이 거의 차이가 나지 않으므로 맛도 비슷했습니다. 이스트까지 제외하고 밀가루와 소금, 물로만 만든 건빵은 십비스켓이라고 불렸는데 이름대로 주로 중근대 서양 해군들이 싣고 다니며 주식으로 삼았습니다. 상하지 않도록 여러 번 구워서 썩지 않고 당연히 오래 갔지만 맛은 지독히도 없었고, 무기로 쓸 수 있을 만큼 딱딱해 때로는 먹는 사람의 이를 부러뜨리는가 하면, 건빵을 맞은 사람의 머리를 터뜨릴 수 있는 위엄을 자랑했습니다. 그대로 먹는 사람들은 없었고, 힘들게 부순 다음 음료수나 수프에 적셔 먹는 게 상식이었습니다. 위대한 자연은 인간을 불쌍하게 여겨 이 딱딱한 건빵을 쉽게 먹을 수 있는 방법을 내주었습니다. 위대한 자연의 사자는 바로 바구미였습니다. 바구미 벌레가 파고든 건빵은 안에서 돌아다니느라 구멍이 많이 뚫려서 그나마 덜 딱딱해졌고, 쪼개기 쉬웠어요. 선원들은 열심히 벌레를 빼면서 십비스켓을 먹었습니다. 그게 힘들고 귀찮은 경우 어두워서 잘 보이지 않을 때 먹어치웠고, 소수는 자연의 “혜택”을 받아들여 단백질 섭취한다 치고 포기하고 먹었다고 합니다. 유인원 연구가 제인 구달 박사에 의하면 아프리카의 침팬지들은 오히려 벌레가 든 과일을 먼저 고른다네요. 침팬지들 역시 자연의 혜택을 받아들였네요. [육포] 육포는 고기만 있으면 전 세계 어디서나 쉽게 만들 수 있는 음식이며, 특히 몽골의 보르츠가 전투식량으로 유명합니다. 쇠고기를 겨우내 나무껍질처럼 보일 때까지 말리며, 이를 소 위장이나 방광으로 만든 주머니에 넣어 가지고 다니다가 먹을 때 뜨거운 물속에 불려 국처럼 먹는 음식입니다. 기동력을 중시한 몽골군에게는 안성맞춤이었습니다. [베이컨] 돼지고기의 배나 옆구리 살을 얇게 저며 만드는 음식입니다. 소금에 후추 같은 양념을 절인 다음 훈제하는 과정이 필수입니다. 로마 시대에 처음 기록되었으며, 요새 미군처럼 장거리 원정과 정복 전쟁을 자주 치렀던 로마군의 전투식량으로 쓰였습니다. 기록에 의하면 283년 직접 페르시아 원정에 나선 카루스 황제도 베이컨을 즐겨 먹었다네요. 페르시아 황제 바흐람 2세는 평화협상을 제의하려고 사신을 보냅니다. 로마 진영에 도착한 사절단은 풀밭에 앉아 딱딱한 콩과 베이컨을 우물거리는 늙은 군인 앞에 안내됩니다. 바로 카루스 황제였죠. 과거 군인이었다가 황제가 된 그는 말단 병사와 똑같은 식단으로 매번 식사하던 참이었습니다. 뛰어난 전략과 솔선수범으로 병사들의 마음을 산 카루스는 결국 메소포타미아를 파괴하고 셀레우키아와 크테시폰을 함락시키는 데 성공했습니다. [병조림과 통조림이 가져온 대 변화] 초급 장교로 시작해 황제가 된 프랑스의 나폴레옹은 자국에게 보급 문제가 있다고 판단합니다. 공격, 방어, 이동을 하려면 군 부대는 제대 별로 모여서 정해진 곳에서 잠을 자고 쉬어야 합니다. 한데 그가 경험한 프랑스 군은 장비도 엉망이요, 제대로 된 전투식량이 보급되지 않아서 주위 민가를 약탈하러 병사들이 돌아다녀야 할 정도였습니다. 약탈에 심취하는 병사는 병사가 아니라 강도가 됩니다. 전투를 잘할 리 없지요. 또한 당장 먹이질 못하는 판에 병사들을 지정 장소에서 머무르게 할 수도, 제시간에 이동시키거나 지시를 내리기도 힘들어집니다. 저녁 시간마다 밥 먹으러 시내로 약탈하러 나가서 소식이 없는 군인들을 상상해 보세요. 나폴레옹은 제대로 된 전투식량에 답이 있다고 생각하고, 상금을 걸어 음식을 오래 저장할 수 있는 방법을 공모했습니다. 이렇게 나온 물건이 병조림입니다. 니콜라 아페르란 과학자는 유리병에 음식을 넣은 뒤, 코르크마개로 밀봉하고 끓인 물로 살균하는 방법을 보고했습니다. 나폴레옹은 기뻐하며 병조림을 프랑스군의 전투식량으로 지정했습니다. 앞서 살펴본 음식들은 무슨 수를 써도 1년 이상 보전하기 힘들지만 병조림은 밀봉 상태만 지속된다면 사실상 100년도 가는 물건이었습니다. 이 말은 간편한 휴대 전투식량을 확보한 동시에 해마다 남는 음식을 지속적으로 저장 가능하므로, 다른 나라보다 뛰어난 전쟁 지속력을 가진다는 뜻이었습니다. 프랑스군은 보급 문제를 깔끔히 해결한 뒤, 전 유럽과 싸우기 시작했습니다. 한편 병조림은 자칫하면 깨진다는 약점이 있었는데 1810년 영국의 과학자 피터 듀런드가 통조림을 발명해 이를 보강했습니다. 전 유럽은 앞 다퉈 통조림을 받아들였고, 상하지 않는 음식을 가진 병사들은 중동, 아프리카, 아시아 등 각지를 누비며 타국을 침탈하고 식민지를 만드는 데 일익을 담당했습니다. 재밌는 점은 통조림이 만들어진 지 60년이 되도록 통조림 따개가 나오지 않았다는 사실입니다. 사용자는 망치, 정, 끌, 전장에서는 단검, 총검을 사용해야 했습니다. 통조림 모양도, 따는 데 쓰는 도구도 제각각이니 당연히 사고가 생겼죠. 조준을 실수해 자신을 찍거나, 따는 데 성공하더라도 들쭉날쭉하게 따진 통조림 날에 다치는 사람이 많았고 항생제가 없던 시절이라 세균 감염에 의한 사망자도 있었습니다. 밥 한 번 먹으려고 목숨을 거는 거나 다름없네요. 이러한 문제는 1870년 미국의 윌리엄 라이만이 바퀴형 칼날이 달린 깡통 따개를 개발한 뒤에야 사라졌습니다. [미국 독립전쟁 당시 전투식량] 식민지 미국은 본국 영국이 부과하는 과중한 세금에 반대하고 1775년 독립전쟁을 시작합니다. 전쟁 당시 야전식은 개개인에게 규정량이 지급되고, 이를 가진 병사들이 식사 조를 짜서 요리하는 방식으로 이뤄졌습니다. 미 독립군, 일명 대륙군은 풍부한 곡창 지대를 가지고 있음에도 인플레이션으로 인해 보급 사정이 열악하여 당시 기준으로도 빈약한 식사를 해야만 했습니다. 이들의 주 메뉴는 파이어 케이크와 베이크드 빈스였습니다. 전자는 앞에서 살펴본 초기 건빵이요, 후자는 우리가 부대찌개에 흔히 넣어먹는 통조림에 담긴 콩입니다. 물론 당시 베이크드 빈스는 통조림 안에 들어 있지 않고, 삶은 콩과 소금에 절인 돼지고기가 섞인 요리를 지칭하는 단어였습니다. 하지만 전장에서 모든 게 제대로 돌아갈 리 없죠. 당연히 가장 중요하고, 비싼 돼지고기가 빠지기 일쑤였습니다. 심지어 콩도 보급되지 않아 대부분의 식사는 딱딱한 파이어 케이크로 해결해야 했습니다. 제대로 먹지 못해 기운이 떨어지고, 기분이 나빠지는 대륙군에게 구세주는 딱 하나뿐이었습니다. 바로 술이었습니다. 대륙군은 하루 118cc 기준의 럼을 지급받도록 규정되었고, 보통 일주일 분량을 수통에 모아놓거나, 몰래 가게에서 추가로 산 뒤 물에 타서 마시며 전투의 공포와 최악의 식사를 견뎠습니다. [미국 남북전쟁 당시 전투식량] 남북으로 갈라진 미국이 1861년 개전하여 1865년 남군의 패배로 끝난 전쟁이 남북전쟁입니다. 철도가 깔리고 초기 산업화에 접어든 경제 구조 때문에 독립전쟁보다는 보급 사정이 나았습니다. 장병들은 건빵, 포크 앤드 빈즈 통조림, 베이컨, 호두와 땅콩 같은 견과류를 주식으로, 기호식품으로는 100인당 커피 원두 4.83킬로그램을 보급받았습니다. 커피 애호가가 꽤 있었는지 개머리판 뒤를 커피 분쇄기로 개조한 소총이 종종 사진이나 유물로 남아 있어요. 커피가 들어온 대신 술은 1832년부터 보급 목록에서 빠졌습니다. 하지만 병사들은 이를 참지 못했어요. 그들은 돈을 거둬 주둔지 근처의 종군상인에게 술을 샀고, 뻔히 사실을 아는 상부도 사실상 묵인하고 음주를 내버려뒀습니다. 건빵은 전통대로 딱딱해 병사들이 싫어했지만 파이어 케이크보단 양호한 물건이었습니다. 어쨌든 치아는 기본적으로 튼튼해야겠어요, 그쵸? 통조림은 정식 전투식량이 아니었으나 휴대성과 간편성에 반한 병사들이 개인적으로 자주 구입했기 때문에 어느새 정식 전투식량처럼 자리 잡았습니다. [제1차세계대전 당시 전투식량] 모든 전쟁을 끝낼 전쟁이라는 슬픈 모토 아래 1914년 시작해 1918년 독일의 패배로 끝이 난 세계대전입니다. 화포와 비행기, 관측술, 참호전의 발달로 병사들은 후방으로 이동하지 못한채, 한 지점에 오랫동안 머물러 식사를 해결할 필요가 있었습니다. 구세주는 역시 통조림이었습니다. 미군은 병사 개개인의 휴대식량을 민간품목을 지정해 군수품을 대신하는 융통성을 발휘했습니다. 미군과 영국군은 모두 쇠고기 소금 절임인 콘비프 통조림을 주식으로 삼았고, 여기에 쇠고기와 야채 스튜인 매커너치 전투식량 등이 추가되었습니다. 독일군은 주식에 소시지가 들어갔고, 빵과 건빵은 3개국 공통 메뉴였습니다. 건빵은 크래커와 비슷하게 생겼으면서 좀 더 두꺼운 질감을 가졌고, 드디어 치아를 위협하지 않는 부드러운 식감을 가진 음식이 되었습니다. 특이하게도 미군은 이머전시 레이션이라는 이름의 비상용 전투식량을 따로 가지고 있었습니다. 이 제품은 볶은 밀가루와 건조 쇠고기 분말을 압착한 식품과 초콜렛을 금속용기에 함께 담아 비상시 고칼로리를 섭취 가능하게 만들었습니다. C-레이션은 이머전시 레이션의 후계작으로 통조림 여섯 개가 한 세트고, 세 개는 햄버거 등 단백질, 나머지 세 개는 각각 비스킷, 음료, 사탕이 들어 있었습니다. K-레이션은 공수부대에서만 쓰려다가 일반식으로 전환된 품종입니다. 보통 육류 통조림, 비스킷, 음료 같은 식품에 설탕, 껌, 과자, 담배, 성냥 등 잡화를 더해 편이성을 확보한 점이 특징입니다. 10-1 레이션은 10명의 1일분 식료품을 하나의 패키지에 담은 전투식량입니다. 통조림 고기, 과일, 야채가 추가된 B-레이션에 콘비프와 압축 비스킷을 함께 넣어 풍성한 메뉴를 자랑합니다. 그동안 C-레이션과 K-레이션만 먹고 질린 병사들에게 대 환영을 받았습니다. D-레이션은 전투기나 폭격기 조종사들이 바다에 조난당했을 때 먹는 비상식량이었습니다. 태평양 지역의 고온다습한 환경 속에 노출되어도 썩지 않는 게 특징이었습니다. 대신 수분이 전혀 없어서 바로 입을 대기보다는 도구를 이용해 부숴 먹는 편을 권장했습니다. 앗, 왠지 십비스켓이 떠오르네요. 바다는 참 무서운 곳이에요. 이 외에도 미군은 병사들을 제대로 먹여야 한다는, 아주 훌륭한 생각을 한 군대로 유명합니다. 아프리카 전선에서 사망한 미군의 품에서 케이크가 나오자, 유명 기갑부대 지휘관 롬멜이 보급 능력의 뛰어남에 놀라며 한탄했다는 일화는 유명합니다. 미 해군은 전쟁 내내 전투 부대들에게 포상으로 아이스크림을 걸었고, 추수감사절과 성탄절에는 무조건 칠면조를 특식으로 지급했습니다. 물론 스테이크나 닭고기, 돼지고기도 자주 지급하면서 미군은 2차대전부터 잘 먹고 잘 싸운다는 전통을 확립합니다.
