상당히 주관적임을 감안하세요. 평양냉면은 가장 좋아하는 별 일 없다면 꾸준히 한 번 씩은 평양냉면을 먹어줘야 하는 사람입니다. 평양냉면의 표본은 의정부계열과 장충동계열로 생각하고 있습니다. 1. 평양면옥(장충동, 논현동) 제가 생각하는 가장 원형적인 형태의 평양냉면입니다. 두 지점의 맛은 모두 비슷하며, 냉면 특성 상의 퀄리티유지는 논현이 낫다고 생각하지만, 제가 매일 가는 건 아니기 때문에 다를 수도 있습니다... ^^;; 아주 밍밍하며 자극적인 맛을 좋아하거나 끝까지 평양냉면의 맛을 받아들이지 못하는 경우 이걸 대체 무슨 맛으로 먹냐고 하기 쉽상입니다. 하지만, 러프한 향의 메밀면이 툭툭 끊어지며 그 뒤로 은은하게 올라오는 육수맛에 중독이 되면 헤어나올 수가 없게 되는 평양냉면의 표본을 보여주는 맛이고, 평양냉면 매니아인 저로써는 의정부 계열과 더불어 매일 먹을 수 있다고 생각되는 맛입니다. 만두 역시 좋아하는 음식인데, 직접 만든 만두는 크게 인상적이지는 않았습니다. 개인적으로는 피가 너무 두껍게 느껴지고 속도 크게 인상적이지는 않았습니다. 2. 을지면옥 의정부 계열 평양냉면 전문점입니다. 파송송 고추가루 팍팍이 이 집의 특징입니다. 북한 이주민들이 꼽은 가장 평양의 평양냉면과 가까운 맛이었다고 수요미식회에서 본 기억이 납니다. 역시 원형적인 형태의 평양냉면이지만, 고추가루와 면의 특징이 평양면옥과는 조금 다릅니다. 고추가루로 고추향을 더했는데, 육수맛을 해치지는 않습니다. 면의 경우 평양면옥보다 조금 얇고 매끈하게 빨리는 느낌이 있어서 약간 더 초보가 먹기 쉽습니다만, 육수의 특성 상 어렵기는 매한가지입니다. 냉면에 수육과 편육이 들어있고 퀄리티는 좋습니다. 퀄리티 유지가 가장 잘 되는 집 중 하나였는데, 요즘 안 된다는 말이 엄청 돌고 있습니다. 저도 가장 최근에 갔을 때는 고개를 갸우뚱했습니다. 편육을 언급 안 할 수가 없는데 아주 괜찮습니다. 수육은 개인적으로 별로였고, 만두는 없습니다. 이 집의 특징은 메뉴에 없어도 편육, 수육, 소주까지도 절반으로 주문이 가능합니다. 3. 필동면옥 역시 의정부 계열 평양냉면 전문점입니다. 을지면옥과 자매 사이입니다. 모든 특징은 을지면옥과 같습니다만, 면이 좀 더 러프합니다. 그래서 을지면옥보다 초보에게 어려운 냉면으로 꼽곤 했습니다. 예전엔 을지면옥보다 퀄리티 관리가 안 된다고 생각했는데, 요즘은 더 잘 유지되는 것 같습니다. 편육, 수육에 대한 감상은 을지면옥과 동일하고, 이 집은 을지면옥과 달리 만두가 있습니다. 냉면에 곁들일만 합니다. 4. 우래옥 (본점, 대치점) 아주 터프한 면에 육향 강한 육수를 내줍니다. 진한 육향을 좋아하시는 분들이 잘 적응해서 먹기 때문에 초심자에게 잘 권유하는 냉면입니다. 면은 툭툭 끊어지는 정도가 가장 심하며 부드럽게 빨리는 느낌 따위는 기대하기 힘듭니다만, 육수와의 매칭은 아주 좋습니다. 평양냉면에 처음 도전하겠다는 분들은 우레옥을 추천합니다. 대치점은 퀄리티 관리가 개판인데다가, 육향이 본점에 비해 약합니다. 근처에 산다고 한들 비추하고 싶습니다. 부대 음식으로는 불고기가 유명하죠. 비싸다는 걸 빼면 괜찮습니다. 5. 봉피양 (방이동점, 기타 여러군데), 청미 (방이점) 평양냉면의 최고 하이엔드랄까, 여러가지 면에서 가장 정점에 도달한 평양냉면으로 생각합니다. 매끈하고 메밀향이 충분하고 잘 끊어져서 굉장히 보편적인 느낌을 주며, 동치미와 육향이 적절하게 섞인 육수는 시원함과 깊은 맛을 동시에 가지고 있고, 그 두 가지의 밸런스는 아주 좋습니다. 고명 역시 필요한 것만 있거, 편육을 따로 주는 것 역시 마음에 듭니다. 다만 이 모든 것은 방이점에 해당하는 이야기이고, 다른 지점은 편차가 심합니다. 봉피양은 기본적으로 돼지고기 집이고 만두, 메밀전, 떡갈비 등을 팔았고 전반적으로 퀄리티가 우수하나 비쌉니다. 다만 다른 가게 가격등을 고려할 때 평양냉면은 나쁘지 않은 가격이라고 봅니다. 봉피양 방이점 바로 맞은 편의 청미 방이점은 역시 벽제갈비가 런칭한 식당으로 설렁탕 따위를 주로 파는데, 고기, 떡갈비, 만두, 메밀전 역시 팔고, 봉피양과 같은 냉면을 팝니다. 냉면만 먹으러 온 손님은 그 쪽으로 안내되곤 합니다. 고기 먹고 후식 냉면으로 적은 양의 평양냉면을 먹을 수 있습니다. 6. 을밀대 독특하고 이질적인 평양냉면입니다. 말을 안 하면 살얼음을 띄워주기 때문에 더욱더 밍밍하게 느껴집니다. 육수의 맛을 느끼고 싶으면 얼음을 빼달라고 하면 됩니다. 저 위의 5가게는 밍밍하고 시원하고 진하고 뭐 이런 차이는 있지만 기본적으로 우리가 보편적으로 느끼는 육향이 느껴지는데 을밀대는 좀 다릅니다. 이걸 어떻게 받아들이느냐에 따라서 을밀대에 대한 호불호가 갈리게 됩니다. 을지면옥에 편육이 있다면, 이 집은 수육이 아주 좋습니다. 7. 서북면옥 역시나 독특하고 이질적인 평양냉면입니다. 육향 자체가 위의 1-5번 가게와는 다릅니다. 을밀대와도 다릅니다. 이걸 어떻게 받아들이느냐에 따라 호불호가 갈립니다. 그리고 8천원으로 어쨌거나 쌉니다. 만두는 맛있게 먹었던 것 같긴 한데 잘 기억이 나질 않네요. 8. 강서면옥 (본점, 압구정점) 면은 평양면옥의 면을 좀 더 매끈하게 가꿔놓은 느낌이고, 육수는 봉피양처럼 시원하면서 깊은 맛을 가지는 느낌입니다. 그래서 봉피양과 비슷한 궤의 맛을 가지나 아주 조금씩은 봉피양보다 떨어지는 느낌입니다. 하지만 봉피양보다 천원이 싸고 충분히 잘 즐길 수 있는 맛입니다. 녹두전, 한 알 만두 등을 곁들여 먹을 수도 있고, 고기도 팝니다. 개인적으로 압구정점이 냉면, 녹두전, 만두 등이 모두 더 나았습니다. 특히 만두는 압구정점이 훨씬 낳은 듯. 9. 정인면옥 평양냉면의 원형적인 맛에 가까우며 면과 육수의 밸런스도 괜찮아 평양냉면을 즐기기엔 충분합니다만, 전통의 강호에 도전할 만하지는 않습니다. 다만, 여의도에서 평양냉면에 8천원이라는 점이 아주 훌륭합니다. 근처에 사시면 그냥 정인면옥에서 즐기시는 것도 좋은 방법입니다. 여기도 고기집이고 만두도 팔았는데 먹진 않았습니다. 10. 유진식당 평양냉면이 4-5천원하며 가성비 끝판왕이던 시절이 있었는데, 이젠 여기도 7천원입니다. 그래도 가격치곤 면과 육수의 밸런스도 꽤 잘 잡은 편이며, 우레옥과 평양면옥의 중간 어디쯤의 맛이 납니다. 전, 수육 등등도 파는데 이것도 값이 올라서 메리트는 점점 떨어지는 중입니다. 11. 평가옥 어복쟁반은 맛있게 먹었으나, 평양냉면은 가장 맛없었습니다. 평가하기 싫네요. *별첨 1) 서울은 아니고 판교의 능라를 한 번 가봤습니다. 면과 육수의 밸런스가 별로였습니다. 퀄리티 잘 나온 날이라도 대충 맛이 상상이 가더군요. 서울 사람이 굳이 찾아갈 이유없습니다. -끄읕- Warning: Use of undefined constant no - assumed 'no' (this will throw an Error in a future version of PHP) in /home/redtea/html/a_skin/bbsd/view.php on line 133 Warning: Use of undefined constant no - assumed 'no' (this will throw an Error in a future version of PHP) in /home/redtea/html/a_skin/bbsd/view.php on line 146 Warning: Use of undefined constant vote - assumed 'vote' (this will throw an Error in a future version of PHP) in /home/redtea/html/a_skin/bbsd/view.php on line 161 5 이 게시판에 등록된 김연아님의 최근 게시물 |

대체로 말씀하신 바에 동의하는 편입니다. 을밀대는 저는 아주 불호하는 편이구요. 그냥이라도 갈까말까한데 줄까지 서야 하니 그냥 아웃.
남포면옥이 아예 평가 대상에도 오르지 않은 것은 특별한 이유가 있으신지요^^;;; 어느정도 자업자득인 면은 있지만 평가옥까지 나오는 판이면 언급은 될 만도 한데요.
평양냉면 집들 다니면서 갸웃갸웃하게 되는 것은 대부분의 집이 간이 일정하게 유지가 안된다는 거였습니다.
대량으로 육수를 뽑아내어 계량화된 간을 하고 있을 것 같은데 그게 오락가락하는 걸 보면 아마도 생각보다 쉽게 그 포인트를 찾기가 어려운가 하고 있답니다.
