  안녕하세요. 티타임에 글 올리는건 처음입니다. 저는 이탈리아 요리를 좋아 하는데요. 한번도 그 쪽 가본적은 없습니다. 그저 레딧 현지 요리사로 추정되는 글들 + 미국의 이탈리아 2세 혹은 3세쯤 되는 레시피들을 추종합니다. 엄격한 이탤리안은 아니고... 오리지널을 따라가려는 이탈리아계 미국 2,3세쯤의 노력으로 보시면 되겠습니다.(저는 순혈 100% 김치맨임) 첫번째는 라구 볼로네제 입니다. 오리지널 라구 볼로네제는, 볼로냐에 사는 사람들이 남은 재료들 짬 때리면서 탄생한 것으로 알고 있습니다. tough cut(양지, 사태 등등)에 지방질을 보충하려고 판체타(저는 베이컨 씁니다)를 넣고 양파, 샐러리, 당근 등등을 넣고 토마토 페이스트 휙휙 넣어서 만드는 음식이죠. 정석으로 가려면, 치킨스톡과 와인을 보충하고 저어가며 10시간을 끓여야 하지만 저는 로마에서 일하는 쉐프라고 주장하는 사람에게 배운대로 토마토 페이스트 + 데미그라스에 치킨스톡 대충 넣고 슬로우 쿠커에 푹 끓입니다. . . 약으로 해놓고 12시간 정도면 맛있는 라구가 완성됩니다. (야매인게 소갈비살 브라우닝 + 베이컨 브라우닝 + 양파 브라우닝 후 대충 때려넣었습니다) 두번째는 라자냐인데요. 라자냐는 라구 볼로네제 소스를 짬때린거라고 보시면 됩니다. 라자냐 면 + 라구 + 화이트 소스 + 치즈 반복입죠.(저는 모짜렐라 치즈와 파르미지아노 레지아노를 갈아서 사용했습니다) 시간이 없어서 간 소고기 + 베이컨으로 타협 봤습니다. 화이트 소스는 베샤멜 소스를 만들지 않고, 라코타 치즈에 계랸 두개 + 소금 + 후추 넣어서 만들었습니다. 간 소고기 + 베이컨 조합으로 만든 다른 라쟈냐입니다. ............................................... 폴로-페스코인 친구를 위해 만든 치킨 라자냐입니다. 크게 다를것 없이 닭다리살(브라질 산 2kg 9900원 식자재 마트에서 구매 가능) 구입 후 1kg정도 브라우닝 후 양파 샐러리 조합에 토마토 페이스트 와인만 넣어서 라구 만들고 겹겹이 쌓아 만들었습니다. --- 이런저런 주저리가 많았는데요. 한 마디로 라구의 핵심은 소고기 + 돼지고기(기름 많은 부분) + 양파 + 당근 + 샐러리(미르푸아라고 부릅니다) 후추 소금 적절히 치고, 토마토 페이스트(이게 더 오리지널에 가깝다고 합니다) 데미그라스(이건 야매입니다) 넣고, 와인이랑 치킨스톡 좀 넣고 오래 뭉근히 끓이면 되는겁니다. 저는 전 세계에서 이탈리아, 중국 요리는 사기라고 생각합니다. 왜냐면 맛있을 수 밖에 없는 재료들로 요리를 하거든요. 라구는 그 중 하나입니다. 다들 도전해 보세요 ! 그럼 너도 나도 이탤리안 요리사 ! * Cascade님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2020-09-01 01:54) * 관리사유 : 추천게시판으로 복사합니다.
