| Subject | 토마토 파스타를 처음 시작하는 사람들을 위해서 |
 작년 6월 처음으로 토마토 파스타를 집에서 해먹기 시작하며 인터넷에 올라온 다양한 레시피와 동영상을보며 조정한 레시피입니다. 이 레시피는 이전에 홍차넷에 올라온 뤼야님의 레시피를 기반으로 조정한 결과물입니다. https://new.redtea.kr/pb/pb.php?id=recommended&no=44 1. 재료. 토마토 홀 2kg, 양파 300g, 마늘 30g, 소금 20g, 허브(오레가노, 타임, 바질), 올리브유, 월계수잎, 후추, 파스타면 1-1. 토마토 홀 - 껍질을 제거한 이탈리아의 플럼토마토 or 산마르자노 토마토를 사용합니다. 400g 캔도 있지만 투입시간 대비 산출을 생각하면 2.5kg 캔 하나를 사용합니다. 인터넷 쇼핑몰 기준에서 구매할 수 있는 플럼토마토(2.5kg 기준 약 5000원 초반)는 롱고바디와 베수가 인지도가 높으며 양측 모두 2.5kg 3캔이상 사용해본 결과 유의미한 품질의 차이를 느끼지 못했습니다. 산마르자노 토마토(2.5kg 기준 만원 후반)는 한국에 들어온 몆개의 제품이 있지만 라피아만테 제품을 제외하곤 지불할 만한 가격이 아니거나 수급이 불안정합니다. 예전에 헌트 제품이 산마르자노 라인업이 들어왔던것을 인터넷서 봤지만 구매하진 않았습니다. 플럼토마토와 산마르자노 토마토는 3배이상의 가격차이가 납니다. 그렇다면 그 가격만큼의 차이가 있는가 하는 의문도 생기죠. 제가 플럼 2.5kg 7캔, 산마르자노 2.5kg 6캔을 소비한 결과 유의미한 맛의 차이가 있다고 판단됩니다. 산마르자노 측이 토마토의 감칠맛과 산미가 더 진하고 좋다 판단됩니다. 다만 플럼토마토로도 충분히 좋은 결과물을 낼 수 있습니다. 참고로 저는 2.5kg 캔을 모두 사용하기보단 500g은 다른 밀폐용기에 넣어두어 토마토 계란 볶음을 위한 재료로 남겨두고 2kg 분량을 사용하곤 합니다. 1-2. 양파 - 양파는 플럼토마토 2kg 기준 250~300g, 산마르자노 토마토 2kg 기준 300~350g 입니다. 양파를 이보다 더 많이 넣으면, 제 기준으로 토마토와 양파의 맛 균형이 양파쪽으로 확 기울어지는 것을 느낄 수 있었습니다. 1-3. 마늘 - 마늘은 편의성을 위해 토마토 소스를 만들며 투입할 것인가 or 맛을 더 추구하여 파스타를 만들기 전에 올리브유와 함께 볶기 시작할것인가 두가지 선택사항이 있습니다. 전 편의성측에 손을 들어주는 편이며, 위에적은 30g보다 더 많은 양을 투입하기도 합니다. 맛을 추구할때는 종종 올리브유에 페퍼론치노 2~3개는 넣어 기름을 내고나서 불을 끄고 마늘을 투입해 아라비아따를 만들기도 합니다. 1-4. 소금 - 토마토 파스파에서는 소금 투입량과 투입 시점을 다양하게 조절할 수 있습니다. 소금이 개입하는 시점은 크게 둘로 파스타 소스를 만들때, 파스타 면을 삶을때로 나눌 수 있습니다. 그러므로 소금의 투입량을 정하기 위해서는 나름의 염도에 대한 기준점을 잡아야합니다. 저는 그 기준점을 토마토 소스를 만들며 투입할 소금의 양은 졸였을 때 어느정도 염도가 개입하여 맛을 살리는 그 기준점 혹은 그보다 조금더 짜게로 설정해 조정한 결과 소스를 만들면서 투입하는 총 소금의 양이 천일염기준으로 20g이 적당하단 결과를 냈습니다. 그래서 미리 저울을 이용해 소금 20g을 계량해 작은 접시에 담아 절반정도는 양파를 볶으며 넣고 남은 것들은 토마토를 끓이는 냄비에 넣곤합니다. 1-5. 허브 - 가장 좋은 것은 당연히 생 허브다발이겠지만 현실적 여건을 고려하면 건조, 분쇄된 허브가 실질적인 선택일 것입니다. 토마토 파스타를 위해서 한가지의 허브만 선택한다면 당연히 오레가노겠지요. 소스에 고기를 넣는다면 고기와 잘 어울리는 타임도 함께하면 좀더 복합적인 향미의 층을 형성할 수 있죠. 물론 고기를 안넣을때도 사용할 수 있다는 점. 바질은 소스를 만들며 투입하면 졸이는 동안 유의미한 향이 다 날아갈 정도로 휘발성이 강하기 때문에 파스타를 만들때 소스를 데우고 면을 섞으며 넣어주는 것이 좋습니다. 물론 생이 가장 좋지만 역시나 건조, 분쇄 제품으로 타협을 하게 되는 것은 아쉽습니다. 나중에 신선한 바질을 수급을 위한 화분을 키울까 생각중입니다. 월계수 잎은 온전한 잎 기준으로 2~3개면 충분합니다. 그보다 더 많이 넣으면 향과 맛에 지나치게 영향을 주었습니다. 후추도 향의 휘발성이 강해 소스를 만들때 넣으면 향이 많이 날아가지만 3~4알 분량정도는 소스 전체에 후추의 맛을 불어 넣기 위해 갈아넣고 파스타를 만들때 소스를 데우며 강조점을 주고 싶을때 조금씩 갈아 넣습니다. 후추는 제가 사용해본 시장에서 투명한 봉투에 넣고 파는 것, ISFI, 피코크, 드로게리아 중 드로게리아 제품이 가장 좋은 품질이었습니다. 다음에 후추를 구매한다면 심플릭 오가닉 제품을 시도해볼 것 같습니다. 혹시 좋은 후추 제품이나 그런 물건을 구할 수 있는 방법을 알려주시면 감사드리겠습니다. 1-6. 올리브유 - 저는 어느 라인의 올리브유든 일단 있는 것을 사용합니다. 다만 산화에 대한 관리를 위해 용량이 작은병을 구매하고 한병을 연 후에는 최대한 빨리 사용하려 합니다. 이전에는 코스트코에 15g 분량으로 소분된 제품이 있어 산화부분에 대한 걱정을 하지않았지만, 현재는 판매하지 않아 아쉬울 뿐입니다. 올리브유가 없으면 어떻게 하냐고요? 음... 저는 토마토 파스타를 직접 해먹으며 올리브유를 적절한 시점에 팍팍 넣어주어 풍미를 불어넣는 것의 중요함을 실감하게 되었습니다. 300ml 혹은 500ml 병정도는 구매해서 사용해 볼만 합니다. 1-7. 파스타면 - 전 디폴트로 데체코 면을 사용합니다. 가격도 싸고 내주는 맛도 만족할만하죠. 한국 회사 이름 붙은 녀석들은 비추천입니다. 데체코보다 더 나은 면들 찾아 시도해본 것은 데체코 구르메와 루스티켈라였습니다. 데체코 구르메라인은 기존 데체코 라인과 비교했을때 제가 분명하게 구분할만한 차이나 좋은점을 찾지는 못했습니다. 다만 루스티켈라면은 삶았들때 면수에 전분도 많이 나왔고 면의 맛도 데체코제품보다 맛있었습니다. 다만 가격이 인터넷가 기준 데체코 기본라인의 약 2~4배정도 됩니다. 혹시 시도해본 파스타 면중 만족스러웠던 제품군에 대해 알려주시면 제 식생활에 반영해보겠습니다. 2. 도구. 토마토를 졸일 냄비, 양파와 마늘을 볶을 냄비, 긴 나무주걱, 통조림 따개, 소스를 담을 통, 저울, 칼, 도마 2-1. 토마토를 졸일 냄비 - 토마토를 졸일 냄비는 휘저을 나무주걱의 길이가 길다는 전제하에 넓고 깊을 수록 좋습니다. 제가 사용하는 집에 있는 스텐 냄비는 지름 25cm, 높이 11cm로 2.5kg 토마토 홀을 붙고나면 5cm 정도만을 남기고 채워집니다. 모두들 중학생땐가 고등학생때 원기둥의 부피계산하던 것 기억하시죠? 토마토 홀 캔의 부피와 비교해서 토마토가 냄비의 절반정도만 채울 수 있도록 조정하는 것을 권합니다. 왜냐고요? 토마토 소스가 끓으면서 좀 많이 튄답니다. 냄비가 높을수록 덜 튀죠. 2-2. 양파와 마늘을 볶을 냄비 - 유튜브에는 원통형 도자기나 스텐 냄비로 볶는 모습을 볼 수 있습니다. 하지만 전 집에 중화팬, 즉 웍이 있단 전제하에 그것을 쓰는게 가장 편하더군요. 2-3. 긴 나무주걱 - 실리콘 주걱도 있지만 저을때 휘어지며 소스가 더 많이 튀도록 하며 더 많은 힘을 사용하게 합니다. 긴 나무주걱을 믿으셔야 합니다. 2-4. 통조림 따개 - 2.5kg 토마토 홀은 통조림을 따기 위해 따개가 필요합니다. 집에 맥가이버 칼이 있다면 그것을 이용할 수 있지만 익숙하지 않은 사람들에게는 힘들고 위험하므로 통조림 따개를 하나정도 구비해두시는 것을 추천합니다. 토마토 통조림을 주문하며 같이 구매하면 둘다 비슷하게 도착하겠죠. 2-5. 소스를 담을 통 - 졸이고 남은 소스를 담을 통입니다. 저는 스텐으로 된 8*20*14(높이)통을 사용하며 토마토 2kg을 사용했을때 상단부 2~3cm을 남기고 꽉 채울 수 있는 부피입니다. 대략 8*20*11 정도니 1760세제곱cm의 결과물이겠군요. 3. 토마토 소스 만들기 3-1. 토마토 캔을 따서 냄비에 부운 후 중불로 가열하기 시작합니다. 토마토가 끓기 시작하면 약불로 줄여주고 나무주걱으로 주기적으로 저어줘 바닥이 눌러 붙지 않도록 합니다. 3-2. 양파를 썰고 웍을 가열한 후 손질한 양파와 소금을 넣어 10분 정도 볶습니다. 저는 양파를 반으로 자른 후 가로세로 약1.5cm가 되도록 썰어냅니다. 볶는 정도는 10분이라 적었지만 양파가 투명해지고 표면에 노란빛이 돌때쯤까지 볶습니다. 3-3. 양파를 볶고 있는 웍에 간 마늘을 넣고 저어주며 마늘이 웍 표면에서 눌러붙기 시작할때쯤(대략3~5분정도) 불을 끄고 토마토가 끓고 있는 냄비에 붙습니다. 3-4. 냄비에 미리 계량해둔 허브와 남은 소금을 넣고 잘 저어주고 계속 졸입니다. 경험상 토마토 냄비에 불을 올린지 2시간 정도면 충분히 졸여집니다. 저는 충분히 졸였다는 것에 대한 기준을 저어줌을 멈춘후 부글부글 끓는 것이 2분정도 지난 후 위에 물 부분이 더 이상 고이지 않는 상태로 잡습니다. 만약 이 졸이는 2시간을 더 단축하고 싶다면 모든 것을 넣더주고 저어준 다음 10~15분간 더 졸이다가 절반정도를 아까의 웍에 옮겨담아 거기에서도 졸여주는 방법이 있습니다. 이 방법을 사용해서 1시간 20분정도까지 시간을 단축했습니다. 3-5. 완전히 졸인 토마토 소스에 월계수 잎을 넣고 저어준 후 통에 옮겨 담아 식힙니다. 완전히 식힌후 냉장보관해야 뚜껑 상단부에 물도 덜 고입니다. 개인적인 팁으로 통에 옮겨 담은 후 그 위에 키친타올을 올려두면 소스가 식으며 생기는 수분은 날라가거나 키친타올에 흡수되고 먼지외 이물질이 들어가는 걱정을 덜 수 있습니다. 4. 토마토 파스타 만들기 4-1 원 팬 스파게티: 1인분 기준 사용하는 도구와 재료. 지름 30cm 코팅팬, 전기포트, 소금 5g, 건바질, 파르마지노 치즈, 물 800ml, 파스타면 100g a. 물 800ml를 계량 후 전기포트로 끓입니다. b. 코팅팬에 가열하며 냉장보관된 소스를 데워준다. 혹시 더 좋을 맛을 얻고 싶다면 마늘기름을 낸후 소스와 섞어주며 데워주거나 아라비아따를 위해 페퍼론치노 기름을 내도 좋습니다. c. 소스가 데워지면 파스타를 담을 접시에 부워두고 팬에 끓인 물을 붙고 소금을 넣는다. 이 때 팬을 씻어줄 이유는 하나도 없음! d. 물이 끓기 시작하면 파스타면을 넣는다. 일반적인 1인분은 100g이지만 100g량이 먹을때 상당히 많으므로 본인의 식사량에 따라 조절하도록 합니다. 전 상황에 따라 면 80~100g을 사용합니다. 80g을 사용한다면 물량도 700ml정도로 조절하거나 나중에 어느정도 국자로 덜어내 컵에 옮겨는 것이 좋습니다. e. 기본적으로 파스파면 포장지에 나온 시간만큼 삶되 상황에 따라 익는 정도가 다르니 편을 씹었을때 가운데 흰 부분이 조금 남아있을 때까지 삶습니다. 참고로 전 그날그날 제 몸상태나 먹고 싶은 익힘수준에 맞춰 면 삶기를 조절합니다. 제 경험상 이탈리아 현지에서도 알단테로만 먹지 않더군요. 다만 이때의 면 익힘상태는 최종 결과물아님을 생각해둬야 합니다. 앞으로 소스를 넣고 유화도 시키며 면은 더 익어갑니다. f. 면상태가 위와 같아지면 면수가 면 한층을 넘지 않도록 국자로 컵에 옮겨두어 조정한 후 올리브유를 넣은 다음 데워둔 소스를 부어 고루 버무리며 건바질을 넣습니다. 그 후 남은 물기를 접시에 옮겨 담았을때 소스가 흘러내리지 않을 정도까지 날려보냅니다. 유화가 덜 됬거나 소스가 너무 뻑뻑하다 생각되면 빼둔 면수를 더 넣어 조정할 수 있습니다. g. 선택사항이지만 마지막으로 옮겨담은 접시에 약간의 올리브유를 뿌리거나 파르마지노 치즈를 갈아 뿌려 감칠맛과 향을 더 불어넣을 수 있습니다. 아 치즈 강판은 마이크로 플레인 제품군 좋습니다. 원 팬 스파게티는 면에서 나오는 전분을 완전히 활용하는 카치오페페 만들기 영상을 보고 최종 조정한 결과물입니다. 이 레시피의 가장 큰 특징은 버리는 면수를 0에 가깝게 하기 위해 800ml란 물과 지름이 넓어 수분 증발량이 많도록 하는 지름 30cm 코팅팬을 사용하는 것입니다. 아 혹시 코팅팬 지름이 25cm이라면 일반 스파게티 면을 넣었을때 완전히 물에 잠기지 않을 수 있습니다. 4-2. 숏파스타를 이용한 파스타 위의 레시피와 대부분이 동일하지만 숏파스타들은 30cm팬에 부웠을때 800ml정도의 물로는 충분히 잠기지 않아 작은냄비를 사용하곤합니다. 전 주로 스테인리스 라면냄비에 600ml 정도의 물을 넣는것으로 위 레시피를 조정해서 사용합니다. 다음을 글 쓴다면 이번에는 기본적인 토마토 파스타 소스에 초첨을 맞췄으니 내가 먹었을때는 맛있던 근본없는 라구파스나 아라비아따 좀더 편하게하기, 고기는 어떤고기를 쓰고 어떻게 세부조정을 할까를 이야기할께요. 그럼 여러분도 너무 겁내지말고 집에서도 맛난 토마토 파스타시도해보세요! * Cascade님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2020-07-28 21:30) * 관리사유 : 추천게시판으로 복사합니다.
