간단팁 하나 써봅니다. 흔히 스테이크를 구울 때 쎈 불에 구워 육즙을 가둬야 한다라는 말 많이 들어보셨을 겁니다 네 맞아요. 그래야 겉은 바삭하고 속은 부드러운 촉촉한 스테이크를 만들 수가 있지요(물론 이견이 있는 셰프도 있습니다) 그러나 그보다 중요한 것은 메일라드 반응(Maillard reaction) 인데요. 생소하시다면 '마이야르 반응' 이라는 것으로 들어보셨을 겁니다 쉽게 설명해 당과 아미노산이 반응해 갈색으로 변하는 현상인데 그래서 ‘갈색화반응(browning reaction)' 이라고도 합니다 이 반응이 왜 중요하냐면 이 화학적 작용이 일어나면 거기서 흔히 말하는 감칠맛과 엄청난 향이 납니다. 그래서 식재료의 맛을 끌어내려면 마이야르 반응을 적극 활용하는게 중요하죠 캐러멜라이즈 시킨다라는 것도 비슷한 작용으로 압니다. 아마 성분이 좀 다르다고 아는데 제가 화학자는 아니라서 ㅠㅠ 백종원 아재도 티비에서 간장을 누르듯이 하면 맛있다 라고 하기도 했고 캐러멜라이즈드를 굉장히 많이 언급하는 모습을 보여줬죠 간장을 누르게 하는 것도 디글레이즈라는 조리기법과 비슷하다고 볼 수 있는데요 디글레이즈란 식재료(주로 단백질류)를 구운 후 팬에 눌러 붙어 있는 것을 물이나 와인, 술 같은 것을 이용해 긁어내서 조리하는 것을 말합니다. 마이야르반응에서 만들어진 맛과 향이 고기에도 있지만 그 눌러붙어 있는 물질에도 많이 들어있기 때문에 그걸 사용해 소스를 만들거나 하는거죠 (커피 로스팅이나 빵 굽는 것도 마이야르 반응의 일종입니다) 그렇다면 마이야르 반응을 크게 발생시키려면 어떻게 해야 하나?? 130~200 도 사이가 마이야르 반응이 극대화되는 온도입니다. 즉 저 사이에서 조리를 하면 된다는거죠. 아 쉽네 그럼 온도계 하나 장만할까요? 아뇨 팬부터 장만하셔야 합니다. 팬? 집에 좋은 팬 많아요. 철 수세미로도 잘 안벗겨지는 코팅팬..... 네 그 코팅팬이 문제입니다. 보통 집에서는 주방처럼 여러가지 팬을 두고 쓸 수 없기 때문에 보통 용도별로 하나 정도씩만 있는 편이죠 게다가 대부분 사용하는 것은 코팅팬인데요 코팅팬을 코팅하고 있는 물질은 테프론이라는 건데 테프론을 만들때 쓰는 물질인 PFOA(perfluorooctanoic acid) 가 가열될 경우 인체에 유해한 연기를 내뿜는다라는 이슈가 있습니다. (예전에 미국에서 소송이 있었는데 어찌 되었는지....) 아시겠지만 일반적인 코팅팬을 불에 올려놓고 아무 식재료도 넣지 않고 오래 가열하면 엄청나게 매운 연기가 발생합니다. 그래서 일단 팬의 온도를 올리기가 힘듭니다. 또한 대부분 팬이 알루미늄소재고 얇아서 열을 보존하지 못합니다. 그래서 할 수 있는 만큼 예열을 하고 스테이크 한덩어리 올려도 스테이크에서 나오는 수분 때문에 금방 온도가 100도 이하로 떨어져버립니다. 그리고 수분은 날아가지 않아 구워지는게 아니라 찌는 듯이 익죠 왜 차돌박이 숙주볶음 같은거 해도 음식점에서 먹으면 숙주가 아삭아삭하고 정말 볶음을 먹는 듯한 느낌인데 집에서 하면 숙주 다 숨 죽고 이게 볶음인지 찜인지 알 수 없을 정도로 물기가 흥건하잖아요? 온도가 낮아서 그렇습니다. 즉 제아무리 예열을 했어도 스테이크 고기가 올라가는 순간 온도가 팍 떨어져버리는 거죠 네 팬부터 바꿔보세요. 무쇠팬은 좀 비싸고...스테인레스 스틸로 된 팬을 사시면 될 것 같습니다. 근데 코팅팬만 쓰시다가 무쇠나 스테인레스 스틸 팬을 쓰시면 애로사항이 많이 꽃피는데 제가 글 쓰는데 재능이 없어서 급 힘듭니다. 그건 나중에 기회가 된다면 올려보도록 하겠습니다 * 수박이두통에게보린님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2017-05-01 14:44) * 관리사유 : 추천 게시판으로 복사합니다.
