동파육 이라는 중국 음식이 있습니다. 이제는 꽤 유명해진 음식이지만 그래도 미식 취미가 있거나 중식당 깨나 다녀보신 분들 아니면 쉽게 접할 수 있는 요리는 아니지요. 조리법이 꽤나 복잡하고 시간이 걸려서 제대로 된 걸 먹으려면 예약이 필요하다고도 하는데, 간단히 말하면 껍질과 비계가 붙은 돼지고기를 기름에 지진 후 술과 각종 향신료 등으로 양념해서 오랜 시간 조리는 음식이지요. 제가 동파육 이라는 음식을 처음 안 것은 어느 요리만화에서 였습니다. 주인공이 밥 먹으러 중식당에 들어갔다가 동파육을 먹고는 '이건 가짜야!' 라고 일갈하고, 분노한 주방장과 요리 승부를 벌여 승리하고는 '니가 만든 건 손님이 몰리자 대충 만든 가짜야! 껍질이 없는 동파육은 진짜가 아니야!' 라고 꾸짖는 내용이었지요. 동파육이라는 이름은 다른 요리만화들을 볼 때에도 툭하면 나왔고, 맛있다는 극찬을 받는 음식이었습니다. 고우영 선생님은 만화 십팔사략에서 역사 이야기를 하시다 말고 빼갈과 함께 하는 동파육의 맛을 극찬하실 정도였지요. '만화를 보니 돼지고기 조림인 것은 알겠는데 대체 얼마나 맛있기에 저러지?' 그렇게 궁금증만 가득했던 시간이 지나, 교복을 벗고 돈을 벌기 시작한 후에야 중식당에 가서 맛을 볼 수 있었습니다. 진한 팔각향과 함께 돼지 비계가 부드럽게 녹아나면서 촉촉하게 고기가 씹히는 그 맛에 매료되어 이후로도 중식당들을 자주 찾아 갔었네요. 그러던 어느 날 본토에서 동파육을 드셔보셨다는 분의 '사실 한국에서 파는 동파육은 대부분이 통조림이고, 본토에 비해 맛이 심하게 떨어진다' 라는 말을 듣고는 충격을 받기도 했습니다. 이 모 셰프님의 중식당에 가면 진짜를 먹을 수 있다고 하는데, 거기 예약은 진짜 전쟁이라 아직도 못 가봤네요. 아무튼 이 동파육에는 요리의 명성만큼이나 유명한 이야기가 있습니다. 이 요리를 만들어낸 사람이 북송의 유명한 문인이자 관료인 소동파 라는 것이지요. '소동파가 황주로 유배를 갔는데 돼지고기가 흔해서 값이 쌌지만 부자들은 먹으려 하지 않고 빈자들은 먹을 줄 몰라서 소동파가 동파육 조리법을 만들어 알려주었다.' 라는 겁니다. 정확히 말하면 소동파의 본명은 소식(蘇軾)이고 동파(東坡)는 그의 호입니다. 오늘 날 당송팔대가의 한 명으로 꼽히는 탁월한 문장가였고, 가는 곳마다 숱한 이야기를 남긴 당대의 스타이자 각종 음식을 소재로 시를 쓰신 미식가, 그리고 꼬장꼬장하면서도 유들유들한 성격으로 평생 4번에 걸친 유배 생활을 견뎌낸 생존왕이기도 합니다. 근데 '고려에게 서책을 전해주지 말자'며 각종 혐려(麗)발언을 했던 사실이 알려지며 한국 인터넷에서 밉상 이미지가 되기도 했지요. 소동파가 살았던 시기는 중국 역사상 가장 유명한 정치 논쟁인 왕안석의 개혁안을 둘러싸고 신법당과 구법당의 대립이 치열하던 시대였습니다. 소동파는 구법당의 일원으로 왕안석의 정적이었죠. 신법당과 구법당의 대립은 날로 험악해지면서 서로 집권과 실각을 반복했는데, 소동파는 여기에 휘말려서 여러 번의 유배와 복직을 거듭했습니다. 동파육에 얽힌 전설도 이 과정에서 나왔지요. 보통 소동파가 남겼다는 '저육송' 이라는 시를 근거로 동파육의 유래를 설명합니다. 黃州好豬肉 價賤如泥土 貴者不肯吃 貧者不解煮 早晨起來打兩碗 飽得自家君莫管 황주의 좋은 돼지고기, 값이 진흙과 같다. 부자는 먹지 않고 빈자는 삶을 줄 모르네 이른 아침 두 그릇 먹으면 배부르니 그대는 염려하지 말게나. 하지만 자세히 들여다 보면 저 시의 내용을 액면 그대로 받아들이는 것은 무리입니다. 정말로 돼지를 먹지 않을 거라면 기를 이유도 없고, 흔했을 리도 없지요. 애초에 중국인이 돼지고기를 먹을 줄 몰랐다는 것은 한국인이 김치 담글 줄 몰랐다는 거나 다를 바 없는 이야기입니다. 그리고 오늘날 동파육으로 유명한 곳은 소동파가 유배갔던 황주(黄州, 오늘날의 황강黄冈)가 아니라 소동파가 지방관으로 재임했던 항주(杭州, 오늘날의 항저우杭州) 거든요. 그래서 알고보면 동파육에 얽힌 전설도 중구난방입니다. 소동파가 만들었다, 소동파가 즐겨먹었다, 소동파가 기존의 요리를 개량해서 만들었다, 소동파가 유배가서 만들었다, 소동파가 지방관으로 재직할 당시 만들었다... 등등 통일된 것이 없어요. 그래서인지 중국의 웹사이트를 뒤져보니 아예 이 모든 것을 종합하여 '소동파가 서주, 황주, 항주 등을 거치며 요리를 발전시켜 완성했다' 라는 식으로 설명하고 있네요. 게다가 이 저육송 이라는 시는 소동파가 남긴 문집에 등장하는 시가 아닙니다. 소동파 보다 한 세대 아래의 문인인 남송의 주자지(周紫芝)가 남긴 죽파시화(竹坡詩話)라는 책에 소동파가 돼지고기를 즐겼다는 일화와 함께 실려있지요. 소동파 본인이 지은 구지필기(九池筆記) 라는 책에는 자저두송(煮豬頭頌), 돼지머리를 삶는 노래 라고 하여 거의 비슷한 시가 실려 있는데, 어쩌면 이 시가 와전이 된 것일지도 모르겠네요. 그리고 구지필기 자체가 이미 청나라 때에 사고전서를 편찬하면서 학자들로 부터 '이거 소식이 쓴 거 맞느냐?' 라는 의심을 받은 책이라고도 하고요. 막상 소동파가 쓴 다른 글을 보면 이 사람이 정말 동파육을 만든 거 맞나? 싶은 대목이 있습니다. "나는 어려서부터 살생을 좋아하지 않았으나 그만둘 수 없었다. 그러다가 근래부터 돼지와 양은 잡아먹지 않게 되었지만 본성이 워낙 게와 조개를 좋아하여 여전히 살생을 피하지 못 하고 있다. 작년(1079)에 나는 오대시 사건으로 죄를 지어 투옥을 당하였다. 처음에는 감옥에서 나오지 못할 것이라고 생각했는데, 얼마 지나지 않아 석방되었다. 나는 그때부터 다시는 어떠한 생물도 잡아먹지 않게 되었다. 만일 누가 게나 조개를 보내주면 전부 강물에 놓아 주었는데, 비록 조개는 강 물에서 살 수 없다는 사실을 알고 있었지만 그래도 만에 하나라도 살기를 바랐고 또 설사 살지 못한다 하더라도 기름에 지져지고 삶아지는 것보다는 낫다고 생각했다. 이렇게 하는 것은 어떠한 바람이 있어서가 아니다. 단지 환난을 직접 겪어보니 내 신세가 푸줏간의 닭이나 오리와 다르지 않다는 생각이 들었고, 차마 먹을 욕심으로 살아있는 것들에게 헤아릴 수 없는 공포와 고통을 다시는 주고 싶지 않았을 뿐이다. 그러나 아직도 여전히 그 맛을 잊지 못하여 생이 다하여 죽은 생물을 먹으니 한스러울 뿐이다." <소식의 시세계와 평론. 동파재발 1,2>에서 발췌. 소동파는 1079년에 시를 지어 조정을 풍자했다는 죄목으로 일명 '오대시 사건(오대시안)'의 필화에 휘말려 사형에 처해질 위기에 놓였다가 당파를 초월한 관료들의 필사적인 구명 덕에(놀랍게도 그의 정적인 왕안석까지 나서서 그의 목숨을 구했습니다) 간신히 목숨만 건져 황주로 유배를 갑니다. 이 사건을 '작년'이라고 하는 것으로 보아 황주 유배 중에 지은 글이 분명한데, 여기서 분명하게 '근래부터 돼지와 양은 잡아먹지 않게 되었지만' 이라고 못을 박습니다. 그러니까 소동파가 정말로 황주에서 동파육을 만들거나 즐겨먹었다고 한다면...소동파 선생의 양심에 흠집이 나는, 다음과 같은 결론을 도출할 수 밖에 없군요. ???: 살아 있는 생명을 어찌 죽이겠느뇨. 너희도 나와 같은 것을. ???: 크~이 맛이야! 어...선생님?! 선생님의 양심에 대한 판단이야 유보하더라도, 적어도 소동파가 '동파육이 있으라' 하며 이 요리를 짠! 하고 만든 것은 아니겠지요. 북송 시대에는 양고기가 최고급 고기로 여겨졌고, 돼지고기는 서민이 먹는 급이 낮은 고기였다고 합니다. 사실 지금도 중식당에 가보면 양고기가 돼지고기보다 훨씬 비싸죠. 소동파는 평생 유배와 사면을 반복하면서, 가는 지방마다 그곳의 음식을 먹고 찬양하는 시를 쓰던 문인이었으니 돼지고기 요리가 신분상승을 하는 데에는 소동파만한 광고 모델이 없었을 겁니다. 산서 지방의 상인들이 관우 신앙을 전국에 퍼뜨렸듯이, 동파육에서도 비슷한 일이 일어났을 거라고 저는 생각합니다. 오늘날 중국에서는 동파육 이외에도 동파육과 비슷한 조리법을 가진 홍샤오러우, 홍샤오저우즈, 커우러우 등등의 숱한 돼지고기 요리가 존재하니까요. 소동파 이야길 더 하자면, 이 사람은 머나먼 담주, 오늘날의 하이난 지방으로 유배를 가고 나서도 그곳의 음식을 즐기며 '나는 사실 여기 사람인데 어쩌다보니 사천성에서 살았어' 라는 식의 농담을 할 정도로 넉살이 좋았다고 합니다. 그 밖에도, "이 시어가 진실로 사람의 뜻에 딱 들어맞긴 하지만 공의 시와 어찌 비교하여 말할 수 있겠는가? 어찌 고기를 실컷 먹고 나서 오히려 조개가 생각나는 것과 같은 게 아니겠는가?" "황노직의 시문은 마치 꽃게와 조개와 같아서 격률과 운치가 고상하고 빼어나 소반의 음식을 무색하게 만드나 많이 먹을 수는 없으니, 많이 먹으면 풍병이 생겨 원기를 해칠 수 있다." <소식의 시세계와 평론. 동파재발 1,2>에서 발췌. 이런 글들이 있는 것으로 보아 진짜로 게와 조개를 좋아하긴 했나 봅니다. 사실 북송의 수도였던 개봉은 운하를 끼고 발달한 도시였기에 수산물들이 수도로 올라와 소비되었다고 하는데, 조개의 경우 값이 무척 비쌌다고 합니다. 바다가 없던 사천지방 태생의 촌놈이신 소동파 선생은 아마도 개봉으로 상경해서 처음으로 맛 보았을 수산물의 맛에 흠뻑 빠지셨었나 봅니다. 돼지고기와 관련한 소동파의 일화도 하나 있습니다. "내가 전에 기산(岐山)에서 견양(汧陽)의 돼지고기가 매우 맛있다는 말을 듣고 사람을 보내 마련토록 했네. 그런데 심부름꾼이 술에 취하는 바람에 밤중에 돼지가 달아나서 다른 돼지를 잡아 보충 하였지만 나는 그 사실을 전혀 알지 못하였네. 그리고 같이 있던 손님들은 전부 큰 소리 치며 다른 곳의 돼지고기 맛은 따라 올 수 없다고 여겼네. 얼마 후에 사실이 탄로 나는 바람에 손님들은 모두 크게 부끄러워하였네." <소식의 시세계와 평론. 동파재발 1,2>에서 발췌. 저는 이 대목에서 모 만화의 명대사인 "녀석들은 정보를 먹고 있는 거야!" 를 떠올렸습니다. 인터넷에서 남들이 맛있다며 호들갑 떠는 가게들 직접 찾아갔다가 겉모양만 그럴 싸하고 맛은 다를 바 없었던 적이 있는데 예나 지금이나 사람 마음은 다 똑같나 보군요. 또, 소동파가 자신의 글에서 소개한 반유반(盤游飯)이라는 음식이 있는데, 오늘날 중국에서는 통자미고(筒仔米糕)라고 부른다고 합니다. 찹쌀에 표고버섯과 파 등을 넣고 볶은 다음, 통 모양의 찜기에 절인 오리알(아마도 피딴)과 고기 등을 함께 넣어 쪄주는 음식이라네요. 이건 무조건 맛있을 것 같은데, 한국에선 정말 들어본 적도 없으니 중국이나 타이완에 가봐야 맛을 볼 수 있겠네요. 하여간 이렇게까지 먹는 것에 관심을 쏟았던 인물이니, 오늘날까지도 음식 분야의 슈퍼스타로 남을 만 합니다. 마지막으로 집에서 동파육 비스무리한 것을 흉내내본 입장에서 한 가지 조언을 드리자면, 그냥 집에서 수육 할 때에도 동파육 기법을 이용해서 고기 덩어리의 사방을 기름에 지진 후 콜라와 간장을 섞어서 조려주면 꽤나 맛있습니다. 여기에 팔각을 사다 넣어주면 중식당에서 먹던 그 맛에 좀 더 가까이 가게 되지요. 감히 말하건데 통조림 쓰면서 조리도 대충 해주는 일부 중식당의 동파육보다는 맛있던 것 같습니다. * Cascade님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2024-01-16 08:34) * 관리사유 : 추천게시판으로 복사합니다.
