'멘헤라의 세계화 : 팬덤의 정병력으로 이름 높은 가수 A의 신규 앨범 구매 여행 중의 사건' 그런 걸 생각할 때가 아니지만 그런 생각을 하지 않으면 진짜로 묻지마 폭력을 휘두르게 될 것 같은 정신상태로, 정신줄을 간신히 부여잡으며 간신히 서너 곳의 후보를 찾습니다. 그렇게 최종 후보지를 정했습니다. 초밥집이고, 런치세트가 이삼만원 쯤 하고, 아주 나쁘지는 않은 구글 평점과, 그럭저럭 괜찮은 타베로그 평점. 대충 흝어보니 지역 체인인 모양입니다. 저는 체인을 불신하는 정도로 지역 체인을 신뢰합니다. 지역 체인점이란 뭐랄까, 나름 그 동네에서 먹혀서 그 동네 중심으로 확장중인, 무엇보다 신뢰할 수 있는 시장 선택의 증명이니까요. 이 정도면 대통령이라 할 수 있겠습니다. 최선은 아닐 지도 모르고 종종 최악의 경우도 있지만, 아무튼 뭔가 그럴싸한 것이 정말 그야말로 대통령이라 할 수 있습니다. 그리고 배가 고파 죽을 거 같은 상태에서 대충 찾아본 거라 사실은 지역 체인이 아닐지도 모르지만, 이 점에서도 어딘가 대통령과 비슷한 느낌입니다. 뚜벅뚜벅, 지하로 걸어 내려가니 클래식한 인테리어가 반겨줍니다. 안내를 따라 다찌에 앉으니 의자를 빼주고 코트를 수거해갑니다. 엥, 이 정도까지를 바란 건 아닌데. 술에는 한잔에 이십만원을 쉽게 쓰지만 밥 한끼에 이만원은 손을 떨게 되는 서울 촌놈은 주눅이 듭니다. 굉장히 고급스러운 메뉴판에, 흘려 써서 도무지 읽을 수 없는 한자로 이거저거 써 있습니다. 대충 읽어보는 척하고 아까 구글에서 본 런치 세트를 시킵니다. 세트가 나오기 앞서 알 수 없는 개인 위생 도구와 생강 혹은 단무지로 추정되는 것의 통짜 절임이 나옵니다. 개인 위생 도구로 추정되는 것을 우아하게 한쪽으로 치워두고, 절임을 노려보며 잠시 고민합니다. 이거 어떻게 잘라먹어야 안 촌스럽지. 에이, 걍 이빨로 끊어먹으면 되겠지. 하지만 요리사가 너무 눈 앞에 있는데, 민망하군. 민망함과 상관 없이 맛은 좋았습니다. 그리고 초밥이 등장합니다. 일찌기 옛 선현들께서는 초밥을 세 종류로 구분하시곤 했습니다. 첫째로, 회전하는 초밥입니다. 둘째로, 회전하지 않는 초밥입니다. 셋째로, 하나씩 나오는 초밥입니다. 이는 역사를 바라보는 관점의 사적 발전과 조금 닮아 있습니다. 회전하는 초밥이란 고대의 순환론적 역사인식론을 반영합니다. 회전하지 않는 집단적 초밥이란 일종의 중세라 할 수 있습니다. 초밥들은 더이상 순환하지 않고, 부유하지 않고, 단정하게 한 세트에 담긴 채로, 집단적으로 그렇게 눈 앞에 도착합니다. 그리고 이제 중세가 끝나는 지점에서 개체성과 단일성의 근대가 펼쳐집니다. 초밥은 하나씩, 한 접시에 담긴 채, 마치 사랑처럼, 봄처럼, 그렇게 다가옵니다. 역사 유물론의 발전 법칙에 따라, 대체로 뒤로 갈수록 비싸고 맛있어집니다. 그리고 이곳은 근대의 초밥을 서빙하는 곳이었습니다. 이것은 시즈오카의 전갱이입니다, 이것은 혹카이도의 성게일입니다, 하는 잔잔한 요리사의 멘트와 함께. 대체로 생선들의 상태가 괜찮았던지라, 저는 그만 두 잔째의 맥주를 시키고 말았습니다. 두 개의 생선이 특히 맛있었는데, 수상한 붉은 빛을 띄고 있는 하나가 특히 더 맛있었습니다. 이름을 물어 찾아보니 하나는 대충 정어리과의 뭐시기였습니다(그리고 물론 지금은 이름을 까먹은 상태입니다). 다른 하나, 그러니까 대충 도미 비슷한 시각적 질감이지만, 선명하게 붉은(껍질층은 선연히 빨갛고, 살에도 분홍빛이 감돌고 있습니다. 뭐랄까. 포토샵 초보가 도미를 가지고 장난치면 나올 거 같이 생겼습니다), 굉장히 맛있던 생선(요리 초보가 이걸 가지고 망한 요리를 만들어도 대충 도미 정도의 맛은 날 거 같은 느낌이었습니다)은, 긴메다, 라고 합니다. 디자인은 굉장히 공격적인데-아무래도 붉은 빛이 도는 흰생선 살들이란 도미나 숭어처럼 육고기의 붉은 색 느낌이라면, 이 친구는 플라스틱 광채 같은 분홍색을 메인으로 약간의 주황색이 비치는 그런 느낌이었습니다-맛은 굉장히 안정적이었습니다. 식감이야 숙성 기술을 타겠지만, 끈적할 정도로 농밀한 식감이었고, 디자인이나 식감에 비해 맛은 어디 한군데 튀지 않는, 과하지 않고, 버릴 부분도 없는 극도로 안정적인 그런 느낌이었습니다. 저는 디자인이나 식감이나 향미나 뭘 평가할때도 어디 한군데 튀고 과잉된 요소를 좋아하고 웰메이드-밸런스를 별로 좋아하지 않는데, 그럼에도 「오 이건 향미가 밸런스 차원에서 굉장하군. 이쯤이면 취향을 넘은 완성도인데」 하고 고평가를 내리게 된 그런 맛이었습니다. 그런데 아무리 찾아봐도 긴메다, 라는 생선은 나오질 않습니다. 다시 물어볼까 하다가 왠지 부끄러워서 그러지 않기로 합니다. 사실 처음에 물어보고 바로 인터넷을 찾아봤는데 안 나와서 다시 물어보았기 때문입니다. 요리사는 두 번 다 또박또박, 음절을 끊어서, 긴 메 다 라고 답했습니다. 그리고 이름을 찾을 수가 없으니 왠지 더 맛있는 거 같습니다. 하여 정어리뭐시기와 긴메다를 추가로 주문하고, 계산을 합니다. 맥주 한 잔에 런치 세트로 끝냈더라면 나름대로 행복했었을 계산서는 이제 조금 불행한 얼굴을 하고 있었습니다. 역시 맛있는 건 비싸군. 뭐, 맛있으니 할 수 없는 일입니다. 아아, 이름을 모르는 신비스러운 붉은 생선, 긴메다여, 내 나중에 요리하는 사람을 만나면 자네에 대해 물어보겠네, 하는 생각을 하며 그렇게 가게를 나와 짧은 도쿄 여행을 즐깁니다. 긴메다, 는 그렇게 역사 속의 일로 잊은 채로 저는 결연하게 살아갔습니다. 그러다가 어제, 마감을 앞두고, 웹서핑을 하다가, 그 친구와 마주치고 말았습니다. 이 분홍색-주황색 살은 분명히 내가 먹은 그거다. 분명하게 그거다. 다행히 사진에는 텍스트가 붙어 있었습니다. 金目鯛 킨메다이. 한국어로는 금목어. 빛금눈돔. 그래 이거다, 내가 그때 먹은 생선. 빌어먹을 일본놈들, 파열음과 연속모음 발음을 똑바로 하란 말이다(물론 일본인들은 조금 다른 입장일 것입니다. 역사란 어려운 일입니다). 긴메다가 아니라 킨메다이구만 킨메다이. 아무튼 그렇게 저는 환희의 소리를 지르고, 마감을 앞두고 한 팀 남아있던 단골 팀은 의아한 표정을 지었습니다. 저는 이 붉은 생선과 저 사이의 역사에 대해 길게 이야기를 늘어놓은 후 「조만간 다시 먹어봐야지」 하는 역사적 의지의 선언을 천명했습니다. 마침 요식업계에 있던 단골 하나가 답합니다. '그거 한국에 없을 건데. 제주도 쪽에서나 가끔 잡히고 도매가 마리당 몇십만원 할껄요. 당연히 고급 일식집들이 「잡히면 우리쪽 주세요」하고 대기 걸어둔 상태고. 아, 일본에서도 X나 비쌀건데 그거. 잡히면 걍 일본에 판다고 들은거 같기도..' 엥, 어쩐지 맛있더라. 더 찾아보니 입질의 추억 선생께서 '최고의 생선회 1위'로 고르신 생선이었다 합니다. 왠지 이 말을 들으니 인생 최고의 생선회 1위인 거 같기도 합니다. 원래 맛이란 본질의 문제라기보다는 기분의 문제입니다. 역사가 그런 것처럼 말이지요. 아, 그 전까지 먹어본 날생선 중에 제일 맛있던 건 강담돔 이었습니다. 생각해보니 강담돔의 이름을 찾는 것도 제법 복잡하고 어려운 일이었습니다. 내게 강담돔을 낸 요리사 '범돔'이라고 말해서 아 그런가보다 했는데, 나중에 찾아보니 범돔이라는 생선은 따로 있고 횟집에서 범돔이라고 하는 건 돌돔이라는 글을 보게 되었습니다. 그렇군, 그때 먹은게 그 유명한 돌돔이로군 어쩐지 맛있더라(그리고 X나게 비쌌습니다). 근데 무늬가 좀 많이 다른 느낌인데. 에이 뭐 사람도 무늬가 다 다른데 하고 넘어간 후 시간이 지나고 다시 찾아보니 범돔은 돌돔이 아닌, 돌돔의 근연종인 강담돔이라고 합니다(돌돔보다는 조금 싸다고 합니다). 더 찾아보니 강담돔이라는 친구는 자연 상태에서 돌돔과 교잡종도 존재하는, 그냥 무늬만 다른 돌돔이라는 이야기도 있습니다. 어쩌면 제가 먹은게 이 교잡종일지도 모른다는 생각이 들기도 합니다. 돌돔이 아닌건 확실한데(선명한 줄무늬가 있지는 않았습니다), 그렇다고 완전 쌔끈빠끈한 강담돔처럼 생겼냐 하면(인터넷 이미지의 강담돔은 정말 쌔끈빠끈하게 생겼습니다. 그 이상의 말로 표현할 수 없는 디자인입니다. 실물도 대충 그러했습니다) 강담돔70%에 돌돔30%를 섞은 것처럼 생겼었기 때문입니다. 역사에 대한 탐구와 생선의 정체에 대한 탐구란 어려운 일인 거 같습니다. 그리고 대상이 진지할수록 어려워지는 것 같습니다. 뭐, 그러거나 말거나 나는 오늘도 역사를 살아가고 대충 밥을 먹고 웃고 그랬습니다. 진지한 것들 사이로 웃으며 걷다 보면 복도 오고 재미있는 이야기도 생기고 맛있는 생선도 먹게 되고 그런 일 아니겠습니까. 아, 요식업계 단골 손님은 '킨메다이 그거 회도 회인데 불써서 조리하면 진짜 맛있다 하던데. 나중에 드셔보세요'라고 덧붙입니다. 나중에 꼭 먹어보고 싶습니다. 언젠가 먹을 일이 있겠지요. * Cascade님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2023-06-05 21:21) * 관리사유 : 추천게시판으로 복사합니다.
