나.는.절.대.조.향.사.가.아.니.다. 그럼 향료 연구원은 과연 어떤 일을 하는가? 이것을 설명하기 위해서는 향료가 어떻게 만들어지고 제품화되어 최종 소비자에게 전달되는지를 먼저 설명해야 한다. 1. 원료(materials) 이전글에서 향료는 여러가지 향료 물질들의 혼합물이라고 설명했다. 향료는 각각 다양하고 특징적인 고유의 향취를 갖는 물질들을 인간이 의도를 가지고 조합한 결과물인데 이를 위해서는 원료를 먼저 얻어야 한다. 향료를 구성하는 원료(=향료 물질)는 대부분 물에 녹지 않는 성분들이다. (친유성, hydrophobic) 그리고 이 원료들은 크게 두 가지 범주로 나눌 수 있다. 하나는 천연(natural) 원료, 다른 하나는 합성(synthetic) 원료이다. 세부적으로 분류할 수도 있지만 간단하게만 살펴보면 천연(natural) 원료는 자연에서 얻은 것을 화학적으로 처리하지 않고 가공한 원료라고 할 수 있다. 전통적인 방식으로는 원물을 한 솥에 넣고 끓여서 물에 녹지 않는 성분들만을 포집한다. 이러한 방식을 수증기 증류(steam distillation)이라 하고 이렇게 해서 얻은 향료 물질을 에센셜 오일(정유, essential oil) 이라고 한다. 에센스라는 명칭이 어떤 것의 정수만을 뽑아냄을 의미한다는 것을 생각하면 에센셜 오일은 곧 원물에서 향의 정수만을 뽑아낸 것이라는 것을 쉽게 파악할 수 있을 것이다. 아로마테라피 등에서 많이 볼 수 있는 '무슨무슨 에센셜 오일'은 앞서 설명한 과정을 통해 얻은 오일을 의미한다.  (에센셜 오일 이미지. 출처 : Cleveland Clinc. https://health.clevelandclinic.org/essential-oils-101-do-they-work-how-do-you-use-them/) 천연원료를 얻기 위해서는 농사를 지어야 한다. 과일이 되었든 약초가 되었든 일단은 원물을 구해야 하니까. 농사는 대표적으로 노동집약적인 산업인데 향료산업에서는 특히나 더 심하다. 왜냐하면 수확하는 과정에서 원물에 손상이 있을 경우 품질이 떨어지면서 향료의 품질도 떨어지게 되기 때문이다. 여성용 향수나 퍼스널 케어 제품에 많이 사용되는 플로럴(floral) 향취를 위해서 재배하는 꽃들의 경우 그 꽃잎을 한 잎 한 잎, 손으로 섬세하게 따야하는데 이렇게 봐도 보통 어려운 일이 아님을 알 수 있다. 게다가 에센셜 오일의 수율은 보통 한 자릿수이다. 에센셜 오일 1kg 을 얻기 위해서는 어림잡아 100kg의 원물이 있어야 한다는 뜻이다. 극악의 수율을 자랑하는 에센셜 오일은 장미(rose)가 있다. 로즈 에센셜 오일은 대략 0.4% 정도의 수율을 자랑한다. 로즈 에센셜 오일을 얻기 위해서는 장미의 줄기나 잎을 배제하고 순수하게 꽃잎만을 이용해야 하는데, 그렇다면 장미 꽃잎만으로 250kg이 필요한 것이다. 장미 꽃 한 잎이 5g은 될까...? 이런 이유로 천연원료들은 대부분 비싸다. 예전에 한 번 가장 최상급의 로즈 에센셜 오일을 경험한 적이 있었다. 프로젝트가 생겨서 같이 일하게 된 영국 조향사가 남는 시간에 자기 회사에서 가장 최상급으로 관리하는 에센셜 오일 컬렉션을 소개해 준 적이 있었는데 나는 그 향을 맡고 나서 내가 경험했던 어떤 등급의 로즈 에센셜 오일보다도 우월하다는 것을 바로 알아차릴 수 있었다. 향취의 아름다움에 대해서는 어떻게 묘사할 방법이 없어서 아쉬울 뿐이다. 나는 당시에 조향사에게 이 오일의 샘플이라도 구할 수 있는 방법을 물어봤지만 최상급으로 유지하는 에센셜 오일이기 때문에 생산량이 많지도 않고 또 회사 외부로 유출하지도 않는다고 했다. 가격을 물어보자 1kg에 4천만 원 정도한다고 했다. 지금 환율을 생각하면 아마도 더 비싸졌을 것이다. 물론 가장 비싼 에센셜 오일을 예로 들었지만 로즈 에센셜 오일이 아니더라도 천연원료들은 비싼 편이다. 현재에도 그러한데 과거에는 얼마나 비쌌는지는 가늠조차 되지 않는다. 그렇기 때문에 과거에 향은 귀족과 부유층만이 사용할 수 있는 사치품이었다. 합성(synthetic) 원료는 화학적인 방식을 통해서 정제, 분리 또는 합성한 물질을 의미한다. 천연 원료에 포함되어 있는 물질과 인간이 인위적으로 만들어낸 물질이 모두 해당한다. 고등어가 몸에 좋은 이유 중 하나는 그 안에 포함되어 있는 오메가-3 지방산 때문인 것처럼 생각하면 된다. 합성 원료는 화학 공장에서 합성을 통해 대량으로 얻을 수 있다보니 천연 원료에 비해 값이 매우 저렴하다. 그 덕분에 향의 가격이 낮아지고 더 많은 사람들이 향을 이용할 수 있게 되었다. 더 많은 소비자들이 생겨나고 그로 인해 더 많은 자금이 향료 산업에 투입되면서 향료 산업은 폭발적으로 발전할 수 있게 된 것이다. 향료에서 천연원료와 합성원료는 상호보완적인 관계이다. 천연원료는 깊고 풍성한 향취를 갖고 있으며 이는 아무리 합성원료들을 조합하더라도 따라잡을 수 없다. 합성원료들만으로 천연원료를 99.99% 모방하더라도 그 0.01%, 0.001%의 차이가 결코 따라잡을 수 없는 완성도의 차이를 만들어내는 것이다. 100% 모방할 수는 없느냐고 물어볼 수도 있지만 아직까지 기술의 한계로 인해 천연원료를 100% 재구성하지는 못하고 있다. 로즈 에센셜 오일의 경우 구성 성분 (composition) 중 상당 부분(약 45% ~ 50%)를 차지하는 시트로넬올(citronellol) 이라는 성분이 있다. 이 물질은 그 자체로도 장미향의 느낌을 일부 갖고 있다. 장미향을 구성하는데 핵심 원료이고 맑고 순수한(clean, pure) 장미 이미지를 주기 위해 많이 사용하는데 때로는 가격이 저렴한 에센셜 오일 상품을 만들기 위해 희석하는 용도로 사용하는 사람도 있다. 물론 이런 경우 전체적인 품질 저하의 원인이 되기도 한다. 능력 있는 조향사는 각각 원료들의 품질과 향료의 가격 등 여러가지 요소를 고려해서 클라이언트가 원하는 품질과 가격의 향료를 만든다. 이를 위해서 훈련이 필요하고 또 많은 경험이 요구되는 것이다. '천연원료, 천연향료'는 몸에 좋다, 안전하다고 인식하는 소비자들이 많다. 아마도 채소가 몸에 좋다는 사실이나 유기농에 대한 인식들이 향에도 그대로 적용되어서 그렇지 않나 싶은데, 실제로는 그렇지 않다. Jellinek은 그의 저서 Perfumery : Practice and Principles 에서 '석유도 천연인데 그럼 석유도 몸에 좋냐?'고 반문했다. 앞서 말했던 것처럼 천연원료와 합성원료는 상호보완적인 관계이고 어느 한쪽이 우월하고 열등한 관계가 아니다. 조향사의 의도와 향료의 목적에 맞게 쓰이면 되는 것이다. 그러나 어떤 소비자들은 천연원료가 좋고 합성원료가 나쁘다고 인식하고 있고, 그렇기 때문에 천연원료, 천연향료만을 사용한 제품을 찾으면서 사람들에게도 이러한 제품이 안전하다고 설파하고 있고 그 결과로 '천연향료 사용!' '합성향료 X!' 등의 표현을 쓰는 제품들이 시장에 많이 존재한다. 합성이라는 단어가 사람들에게 주는 거부감과 공포심이 이러한 결과를 초래한 것 같은데 어떻게 해야 이 오해를 해소할 수 있을지 잘 모르겠다. 2. 향료(fragrances & flavors) 조향사는 향의 목적에 따라 원료 물질을 혼합하여 향료를 만든다. 그렇게 해서 구성된 향료는 크게 fragrance 와 flavor 로 나뉜다. flavor는 먹을 수 있는 향을 의미한다. 입을 통해 느끼는 향들을 뜻하는데 fragrance는 flavor를 제외한 향들, 즉 먹을 수는 없지만 우리가 일상에서 사용하는 거의 대부분의 향을 뜻한다. (flavor 먼저 설명할거면 flavor & fragrance 라고 쓰지 왜 순서를 반대로 했냐고 반문할 수도 있는데, 관습적으로 fragrance를 먼저 쓴다.)  조향사들의 클라이언트들은 이 같은 제품을 만드는 사람들이다. 사실 이외에도 향이 사용되는 제품은 더 많다. 심지어 볼링공에도 향이 들어가는 것을 봤다. 볼링공에 멜론향이 왜...? 클라이언트들이 요구하는 향료를 만드는 과정은 매우 지난한데, 이 과정은 클라이언트들의 마음 속 어딘가에 존재하는 향을 지도도 없이 찾아가서 발견하는 것과 같다. 그렇게 더듬어가며 조향사는 향을 만들고 다른 평가자들로부터 평가를 받는다. 영어로는 Evaluation Board라고 지칭하기도 하는데, 가장 가깝게는 자신보다 상위자일수도 있고 평가 업무를 전담하는 사람일수도 있다. 마치 연구자가 논문을 쓰면 동료 평가 (peer review)를 받는것과 같다. 연구자가 논문을 자기의 분신처럼 아끼듯 조향사들 또한 자신의 향을 그렇게 아낄수 밖에 없는 것은 당연하다. 하지만 이러한 애착이 때로는 향에 대한 냉정한 평가를 어렵게 하기 때문에 다른 사람들로부터 평가를 받아보는 것이다. 3. 제품(Applications) 향료는 만들어졌다. 하지만 향료 그 자체가 제품이 되는 것은 아니다. 향이 들어간 제품이 소비자들의 선택을 받는다. 향이 없는 상태의 제품을 베이스(base)라고 부른다. 제품 회사들은 자신들이 개발한 베이스에 향을 첨가하여 제품을 완성하게 된다. 이 과정은 하얀 도화지에 수채화를 그리는 과정과는 전혀 다르다. 베이스 또한 고유의 냄새를 갖고 있기 때문이다. 베이스가 가진 냄새는 향료 고유의 향취가 발현하는 것을 방해하는 요소가 된다. 물론 향료는 이러한 베이스의 냄새를 디폴트로 상정하고 덮어버려야(masking) 하지만 이 과정에서 향취가 달라지기도 하고 때로는 충분히 가려주지 못하기도 한다. 어떤 사람들은 그런 경우에 향료를 많이 사용하면 되는 거 아닌가? 하고 생각할 수 있다. 하지만 향료 또한 적절한 양이 중요하다. 화장품이나 퍼스널케어 제품의 경우 베이스 또한 여러가지 유기물과 무기물이 혼합되어 있다. 이를 유지하기 위해서는 적당한 양의 계면활성제가 필요하다. 계면활성제는 쉽게 말하면 물과 기름을 섞이게 하는 물질이다. 계면활성제가 적당량 들어가야 제품이 일정한 형상을 유지하게 되는 것이다. 그리고 일정한 형상을 유지하는 것을 두고 '안정하다(stable)'고 표현한다. 오래된 화장품을 열어보았을 때 물이 생기거나 기름이 뜨거나 하는 경우가 있는데 이는 안정성이 깨진 상태인 것이다. 향료는 대부분 친유성이기 때문에 베이스에 들어가 안정적으로 자리잡으려면 그만큼 계면활성제가 더 필요하게 된다. 만약 베이스 마스킹이 잘 안 되어서 향료를 더 많이 사용하게 되면 그만큼 계면활성제도 많이 필요하게 된다. 무한정 늘릴 수 없다는 것은 너무나 자명한 사실이다. 반대로 부족하게 되면 향이 베이스로부터 쉽게 분리되는데 이는 제품 품질이 떨어진다는 뜻이다. 뚜껑을 열었을 때 갑자기 액체가 흐르는 제품을 좋아하는 소비자는 없을 것이기 때문이다. 이렇게 제품 개발 과정에서 베이스와 향의 호환성 등을 살펴보면서 적절한 향료 사용량을 결정하는데 이를 두고 부향(附香)이라고 한다. 관용적으로 베이스에 향을 태운다고 표현하기도 한다. 향은 베이스를 타고 소비자를 향해서 간다. 제품에 좋은 향은 베이스와 궁합이 잘 맞아서 서로 변화를 일으키지 않거나 분리되지 않고, 오래 보관되어도 향이 변하지 않으며 동일하게 유지되는 향이다. 하지만 향이 향일 수 있는 것은 날아가서 인간의 코에 닿기 때문이고 그렇다는 것은 제품에서 조금씩 떨어져나온다는 뜻이다. 그래서 제품마다 차이가 있지만 보통 2년에서 3년 정도 유통기한을 두고 그 이전까지 향이 완전히 사라지지 않으면 안정한 향으로 생각한다. 4. 생산(Mass Production) 제품 개발은 실험실에서 이루어지는데, 많은 화학실험과 공정이 그렇듯 실험실에서는 괜찮았던 것이 생산공정에 들어가면 이상해지는 경우가 있다. 제품도 마찬가지다. 대량생산을 위한 설비와 공정의 차이 때문에 테스트 샘플과 양산 제품 사이에서 품질 차이가 발생하는 경우가 많다. 향료의 경우 대부분은 열이 발생하면서 생각보다 많이 날아가거나 아니면 예상하지 못했던 화학반응이 일어나 설계하고 기대했던 향과 다르게 나온다. 그래서 제품 개발 과정에서 괜찮았다고 안심할 수가 없다. 공정을 점검해서 해결되면 다행인데 그렇지 않으면 제품의 실험 조건을 바꿔줘야하고 최악의 경우에는 향료를 다시 개발해야할 수도 있다. 이렇게 되면 일정이 지연되고... 납기가 지연되고... 누구의 잘못이냐 너의 잘못이니 나의 잘못은 아닌거 같은데... 하는 상황을 맞닥드리게 될 수 있다. 5. 유통과정(Logistics) 제품 대량 생산까지 잘 되었다! 이제는 소비자를 만나러 갈 시간이다! 문제는 없겠지? 하면 큰 오산이다. 유통과정도 의외의 변수로 작용한다. 제조업이나 물류업을 하는 사람은 잘 알겠지만 이들에게 우리나라 사계절은 축복이 아니라 저주다. 세계제일 미군도 훈련오는 대한민국의 위엄은 사계절로부터 시작된다. 혹한기와 혹서기는 향과 제품에도 최악의 환경인데, 겨울에는 얼고 녹으면서 제품의 분리가 가속화되거나 향이 결정화되기도 하고 여름에는 높은 온도로 인해 향이 변하거나 (변취) 때로는 제품 자체가 변질되기도 하는 것이다. 물론 제품 개발 단계에서 최대한 테스트를 진행하지만 유통과정과 보관상태에 따라 예측하지 못한 정도로 온도가 더 떨어지거나 더 올라가는 경우가 생기기도 한다. 예전에 미국으로 수출했던 제품이 잔뜩 클레임을 받은적이 있다. 소비자가 쓸려고보니까 안정성이 완전히 깨져있는 상태였던 것이다. 원인을 조사했더니 8월에, 제품을 실은 컨테이너선이, 그것도 적도 근처를 지나가면서 내부 온도가 거의 100도 가까이 상승했다는 것을 알게 되었다. 이전까지는 전혀 예상하지 못했던 조건이었다. 세상 이런 일도 있구나 하고 허탈하게 지나갈 수 밖에 없었다. 6. 소비자(Consumers) 드디어 향은 소비자에게 닿았다. 그렇지만 끝이 아니다. 향은 호불호가 꽤 뚜렷한 부분이기 때문이다. 향이 마음에 안 들면 '아 이거 내가 좋아하는게 아니네.' 하고 넘어가면 좋은데 어떤 소비자들은 "향이 이상하다!"고 하고 심하면 "무슨 이런 제품을 만들었냐!" 고 화내기도 한다. 무플보다 악플이 낫나? 아니면 악플보다 무플이 낫나 하는 고민을 하게 만드는 지점이다. 어떤 사람들은 특정 향에 심한 거부 반응을 일으키기도 한다. 자신이 싫어하는 향은 곧 잘못된 것이다라고 결론내기도 하는데, 그러다보니 제품에 대한 클레임 중 향에 대한 불만이 차지하는 비중이 상당하다.  위 그림은 지금까지 설명한, 향료가 만들어지고 제품화되어 최종 소비자에게 전달되는 과정을 간단하게 나타낸 그림이다. 각 단계별 참여자들이 한 숟가락씩만 보태도... 심지어 이 그림에는 등장하지 않는 참여자들이 있고 이런저런 이유로 돌발적으로 발생하는 변수들로 인해서 매번 순탄하게 진행되지 않는다. 모든 참여자들이 공감하고 동의할 수 있는 좋은 향에 대한 객관적인 기준이 없고, 그로 인해 모두가 자기 만의 기준을 가지고 이야기한다는 점이 향료 개발이 가진 근본적인 어려움이라고 할 수 있다. 그래서 향료 연구원이 하는 일은 분량 조절 실패 관계로(...) 다음에 하기로 한다. * Cascade님에 의해서 티타임 게시판으로부터 게시물 복사되었습니다 (2022-04-05 09:04) * 관리사유 : 추천게시판으로 복사합니다.
