https://youtu.be/Bo1pt3nIBW0 외국어 자막이 없어 영상내용을 간략히 소개해드리자면, 일본의 모 스시전문점 체인이 스시장인 육성을 위한 새로운 시스템을 개발했다고 합니다. 기존의 스시장인들은 가게에서 잡일을 도우면서 선배가 스시 쥐는 법을 눈대중으로 따라 배우는 식이었는데, 이 체인점이 도입한 새로운 제도는 회사에서 제공한 매뉴얼을 참고하면서 가게에서 직접 손님에게 스시를 쥐어 주면서 기술을 배운다고 합니다. 물론 일하는 만큼 급료도 정상적으로 지불한다고 하네요. 실제로 일본의 혹독한 도제식 스시 수련법에 질린 견습생들이 더 이상 스시집을 선호하지 않게 되면서, 일본 스시업계는 인력난을 겪고 있다고 합니다. 해당 체인점의 전략은 이런 문제를 해결하기 위한 것으로 보입니다. 다만, 요리사의 경력이 떨어지는 만큼 가격은 약간 저렴하게 받는 것 같았습니다. (자세한 것은 메뉴판을 봐야 알겠지만.) 좋은 방법인지는 제가 스시업계를 몰라서 판단할 부분은 아닌 것 같습니다. 다만, 젊은 신인들에게 배울 기회를 마련해주려고 노력한다는 점은 평가하고 싶습니다. 요즘 사회 분위기가 실전경험이 없는 젊은이를 용납하지 못하는 부분이 있습니다. 그렇지만 결국에는 숙련도가 떨어지는 신입을 누군가는 맡아서 가르치지 않으면 안 되는데, 이걸 아무도 안 하려고 하면 나중에는 모두가 불행해지지 않을까 하네요. 뭐, 높으신 분들은 그때가 되면 아예 외국에서 인재를 수입하려 하는지는 모르겠습니다만.
