영어로는 아트카 매커럴(Atka mackerel)로 불리우며 유명한 임연수어 어장인 알래스카 남부의 아토카 섬의 이름을 딴 것입니다. 일본 이름은 호케, 학명은 Pleurogrammus azonus이구요. 이 물고기는 비늘부분이 두꺼워 구워 먹으면 껍질이 정말 맛있습니다. 임연수어의 비늘부분은 타 물고기에 비해 굉장히 두껍고 불에 잘 타지 않으며 오히려 쫄깃한데다 바삭하고 고소하기까지 한 신비의 영역이라고도 합니다. 가끔 비늘에 붙어버린 측면 가시가 납작하게 숨어서 딸려 올라오므로 아이들에게 먹이거나 혼자 뜯어먹을 때 각별히 유의해야 합니다. 적당히 소금간을 들이고 소량의 튀김가루를 솔솔 뿌려서 바짝 익히면 껍질의 맛은... 가히 껍데기 한 폭으로 밥 한 그릇을 해치울 수 있는 위력을 보여줍니다. 강원도 동해안의 어느 부자가 비싼 임연수어 쌈만 먹다 망했다하여 이면수 쌈 먹다가 천석꾼이 망했다는 말도 있습니다.
임연수어의 제철은 임연수어들이 산란하기 위해 뭍에 가까운 바닷가로 진입하는 시기인 9월에서 이듬해 2월 가량입니다. 일본에서는 싸고 양많은 생선의 대표격 정도 되는 것 같구요. 홋카이도 사람들이 즐겨먹는다고 하며 술집 등지에서 주머니에 돈이 없는 대학생들의 양많은 안주로 사랑받는 모양입니다. 하지만 생선 자체의 평은 좀 낮은데, 기름기가 적어서 맛이 담백하지만 그건 역으로 말해서 별 맛이 없다는 의미도 되기 때문입니다. 특히 생선의 감칠맛을 중시하는 일본에서는 평이 더 낮아질만 하지요. 게다가 전후에 구호물품으로 질 낮은 임연수어가 뿌려진 경력이 있어서 나이가 꽤 되는 세대에게는 더 평이 낮은 것 같습니다.

일단 남자주인공 이름부터가 임연수죠. 이건 낚시를 하기 위해서 임연수어에서 가지고 온 이름이 분명합니다. 임연수어란, 쥐노래미과에 속하며 몸 길이는 45cm 가량으로 모양이 쥐노래미와 비슷하나 꼬리 자루가 가늘고 머리가 작으며, 몸빛은 노랑 바탕에 다섯 줄의 검은색 세로띠가 있다. 살이 부드럽고 비린내가 적은 흰살생선. 한해성 어종으로 한국과 일본에 분포하는 생선입니다. 이름이 생선답지 않아 본인이 잘못 들었을 거라고 생각하며 이면수라고 뇌내 변경해 기억하는 경우가 많다. 이면수는 방언이구요. 이 특이한 이름은 진짜로 사람이름에서 유래한 것으로 조선 정조 때의 서유구가 지은 난호어목지(蘭湖漁牧志)에 의하면 함경북도 임연수(林延壽)씨가 잘 낚아 사람들이 임연수가 낚았던 생선이라고 부르던 것이 이름으로 굳어 임연수어(林延壽漁)가 됐다고 합니다. 신증동국여지승람에는 임연수어(臨淵水魚), 전호지에는 이면수어(利面水魚)라 적혀 있다고 하구요.
영어로는 아트카 매커럴(Atka mackerel)로 불리우며 유명한 임연수어 어장인 알래스카 남부의 아토카 섬의 이름을 딴 것입니다. 일본 이름은 호케, 학명은 Pleurogrammus azonus이구요. 이 물고기는 비늘부분이 두꺼워 구워 먹으면 껍질이 정말 맛있습니다. 임연수어의 비늘부분은 타 물고기에 비해 굉장히 두껍고 불에 잘 타지 않으며 오히려 쫄깃한데다 바삭하고 고소하기까지 한 신비의 영역이라고도 합니다. 가끔 비늘에 붙어버린 측면 가시가 납작하게 숨어서 딸려 올라오므로 아이들에게 먹이거나 혼자 뜯어먹을 때 각별히 유의해야 합니다. 적당히 소금간을 들이고 소량의 튀김가루를 솔솔 뿌려서 바짝 익히면 껍질의 맛은... 가히 껍데기 한 폭으로 밥 한 그릇을 해치울 수 있는 위력을 보여줍니다. 강원도 동해안의 어느 부자가 비싼 임연수어 쌈만 먹다 망했다하여 이면수 쌈 먹다가 천석꾼이 망했다는 말도 있습니다.
