냉면처럼 차가운 면 요리는 세계 어느 곳을 둘러봐도 흔히 볼 수 있는 음식은 아닙니다. 일본의 소바나 중국의 량몐은 실제로 차가운 요리라기보다는 뜨겁지 않은 요리로 보는 것이 맞을 겁니다. 이탈리아의 파스타 역시 근래에 들어서야 차가운 파스타면을 샐러드와 함께 먹고 있지만 주로 뜨겁게 먹는 음식이죠. 우리 역사에서 냉면이라는 단어가 처음 등장한 것은 조선중기인 17세기초로 보여집니다. 당대의 문장가이자 우의정이었던 장유의 '계곡집' 에 실려있는 '자장냉면' 이라는 시에서 냉면에 대한 언급을 찾아 볼 수 있습니다.(이름만 보면 검은색일 것 같지만 실제로는 붉은 색입니다.) 높다랗게 툭 터진 집 좋다마다요, 게다가 별미(別味)까지 대접을 받다니요 노을 빛 영롱한 자줏빛 육수, 옥 가루 눈꽃이 골고루 내려 배었어라 입 속에서 우러나는 향긋한 미각, 몸이 갑자기 서늘해져 옷을 끼어 입었도다 나그네 시름 이로부터 해소되리니, 귀경(歸京)의 꿈 다시는 괴롭히지 않으리라 냉면 한그릇에 시름까지 해소되는 걸 보니 보통 음식은 아니었나봅니다. 더욱이 냉면을 별미라고 묘사한 문장을 보면 냉면이 그 당시 서민화되지 않은 귀한음식으로 보여집니다. 이 시에서 특이 한 점은 냉면 육수를 자주빛으로 묘사한 부분입니다. 조선시대에는 동치미, 참깨, 콩물, 꿀물, 오미자 등이 냉면 육수로 쓰였다고 합니다. 요즘에 꿀물 육수에 냉면을 넣어주면 어떤 반응일지 궁금하네요. 흐흐흐 실제로 '규합총서'와 같은 조선 후기 문헌에는 국수를 오미자 국물에 말아 먹었다는 대목이 자주 나옵니다. 이런 정황을 살펴볼때 시에서 나오는 자주빛 육수는 오미자를 우려낸 육수일 가능성이 높습니다. 오미자 육수를 이용한 여름국수의 경우 투명한 앏은면을 주로 썼는데 붉은 국물에 녹두가루로 만든 투명한 면을 생각해보면 색감이 고와서 보기에 좋았을 것 같습니다.  - 맛은 없을 것 같아 보이는게 함정(?) 현재 우리가 먹는 메밀국수에 동치미 국물을 사용하는 평양냉면의 경우 홍석모의 '동국세시기'에 유사한 형태로 묘사되고 있습니다. 문헌으로 유추해볼때 적어도 조선후기인 19세기부터는 지금의 형태의 냉면이 존재했다고 보는 것이 합리적이겠네요. 우리 문헌에 '냉면'이라는 이름이 본격적으로 등장하는 시기는 19세기 이 후부터 입니다. 본격적으로 등장하긴 하지만 서민들이 주로 먹을 수 있는 음식은 아니었지요. 메밀로 면을 만드는 과정이 워낙 손이 많이 가는 작업이다 보니 양반댁이 아니고서야 해먹기 쉽지 않았을겁니다. 재미난 점은 냉면이 주로 양반들이 먹는 음식이다보니 기생문화와도 관련이 깊다는 것이죠. 평양, 함흥, 진주, 해주 처럼 냉면이 유명한 곳은 당대의 유명한 기생들을 배출 한 곳이기도 합니다. 냉면은 기방에서 거하게 술을 마신 뒤 시린 속을 달래주는 해장음식으로 당시에 많은 사랑을 받았다고 하네요. 요즘에도 고깃집에서 마지막에 입가심으로 냉면을 말아먹는 경우가 많은데 조선시대 기방문화에서 비롯된 것이라고 합니다. 1900년대 들어 냉장고의 발명과 더불어 인공적으로 얼음을 만드는 기술이 개발되면서 냉면이 대중적인 서민음식으로 자리잡았지만 원래는 고종황제쯤 돼야 야식으로 먹을 정도로 귀한 음식이었다죠. 오늘 점심에 냉면을 먹은 김에 생각이 나서 주절주절 써봤네요. 기회가 된다면 다음엔 1900년대 이 후 냉면에 대해서 한번 써보겠습니다. 일단 면요리 자체가 귀한 음식이였지요.
과거에는 도정기술도 변변치 않아서 쌀로 개떡을 해 먹던 시절이였습니다.
지금과 같은 밥을 하려고 쌀을 절구에 빻아서 하얗게 하려면 얼마나 많은 노동이 필요하며 사라지는 쌀도 많았을 것이니까요.
그런데, 밀을 하얗게 가루로 만들어서 뭉쳐서 국수를 해 먹는다는 것은 상류계층이 아니면 먹기 힘든 음식이지요.
지금도 안동지역의 제삿상에는 국수가 올라가는데, 그 만큼 귀한 음식이였다는 증거일 겁니다.

그런데, 밀을 하얗게 가루로 만들어서 뭉쳐서 국수를 해 먹는다는 것은 상류계층이 아니면 먹기 힘든 음식이지요.
지금도 안동지역의 제삿상에는 국수가 올라가는데, 그 만큼 귀한 음식이였다는 증거일 겁니다.

일단 면요리 자체가 귀한 음식이였지요.

국수틀에 장정 두명이 매달려서 국수틀을 누르고 있는 모습이 보입니다.
당시 장정의 몸무게가 대략 50kg정도 되었을 것이니 지금에 비하면 엄청나게 힘든 일이였지요.
(한식 대첩에 그 당시의 국수틀을 가지고 나온 팀이 있었는데, 쇼가 아니라면 할 수 없는 일이 였을겁니다.)
냉면 한 그릇 먹자고 하루 종일 육수 만들고, 메밀을 맷돌에 갈아서 가루로 만들어서 반죽하고,
장정 두명이 국수틀에 매달려서 국수를 만드는 장면을 상상해 본다면,
왕이 아니면 먹기 힘든 음식인 것이 당연하지요.
20세기 이전의 조선땅에는 기생집 말고 요리를 파는 집이 없었을 겁니다.
심지어 1970년대 까지도 청요리집, 일식집을 제외하고는 요정에서 한정식이라는 요리를 팔았으니까요.
자장냉면은 아니지만, 한 때 \'호면당\'에서 오미자물 육수를 한 냉면에 가까운 음식을 출시한 적이 있습니다.
면이 소면은 아니였던 것으로 기억이 되니까요.
맛은 다시 먹고 싶은 맛은 아니였습니다만, 별식으로 먹는다면 먹을 만 할 것 같기도 합니다.
