지난번에 참치덮밥(https://new.redtea.kr/?b=3&n=239)을 해봤는데요, 이번엔 와이프가 동참 모임에 간 틈에 한번 감자 옹심이를 시도 해봤습니다. ---------------------------------------------------------------- 사실 감자 옹심이를 만들게 된 이유는.....얼마전에 감자옹심이 칼국수 맛집이라고 소문난 곳을 갔다가 30분 기달려서 불어터진 면과 성의없는 아주머니에 화가나서 그만.. 췟 차라리 내가 만들어 먹겠다! 하고 시작한겁니다.... 네, 저 소심한 A형이에요. 아주머니한테는 맛있게 먹었습니다. 라고 인사하고 나왔어요. 자 그럼 준비재료는 간단합니다. 언제 먹었는지 기억도 안나는데 남아 있는 메밀면, 그리고 와이프가 요즘 그렇게 비싸다고 말하는 감자느님. 그리고 나머지는 파, 마늘, 멸치, 북어포, 다시마,소금,들깨가루 만들기는 간단합니다. 우선 감자 2개정도를 깎아서 강판에 갈아줍니다. 그리고 갈아둔 감자를 채에 걸어서   요렇게 따로 분리를 합니다. 수분기가 없이 최대한 꾹꾹 짜야합니다. 수분기가 남아있어면 쫄깃함이 사라진다고 합니다. 이렇게 분리를 한 뒤에 약 20~30분정도 가만히 둡니다. 밑에 가라앉은 전분과 꾹 짠 찌꺼기로 옹심이를 만들거거든요.  그리고 언제 먹은지 기억도 안나는 메밀면을  요렇게 잘 삶아줍니다. 이때 중요한 포인트는..살짝 소금을 넣고 삶으면 잘 된데요. 저도 옛날에 얼핏 들은 이야기라 왜 그런지 잘 몰라요. 아마 끓는점이 높아져서 그럴꺼에요.(이과 나왔어요..ㅠㅠ) 그리고 면 끓일땐 항상 어디 도망가지 말고 바로 앞에서 잘 지켜보세요. 이게 금방 거품생겨서 넘치면 아마 와이프한테 등짝 스메쉬를 맞을꺼에요. 조심하세요.  그러는 동안 옆에 가스불에는 멸치,다시다,북어포를 넣어서 육수를 뽑아주세요. 20분정도 팔팔 끓이면 될거에요. 여기서 저는 소금을 살짝 넣고 끓였어요. 육수에 특별한 간을 하지 않고 약간의 소금간으로 먹는걸 좋아해요. 자 면을 다 삶았으면 찬물에 팍팍 씼어서 옆에 모셔두고.. 아까 전분 가라앉힌 그릇을 보도록 합니다.  위에 물은 버리고 바닥에 하얀색으로 가라 앉은게 바로 감자 전분이래요. 생각보다 딱딱하게 바닥에 달라 붙어 있는데, 이걸 숟가락으로 잘 긁고, 아까 열심히 짠 감자 찌꺼기와 함께 잘 섞어줘요. 그리고 동글동글하게 한입에 쏙 들어갈 크기로 만들어줘요.  그리고 아까 팔팔 끓이던 육수에서 다시마와 멸치 북어포를 건져내고 옹심이를 투하해줘요. 퐁당! 그리고 여기에 다진 마늘 조금과 파를 송송 썰어 넣어줘요. 사실 마을은 왜 넣는지 몰라요. 그냥 음식에 다 넣더라구요. 한 5분정도 끓이면 감자 옹심이가 둥둥 떠다니는걸 볼 수 있어요. 그럼 다 익은거에요.  그럼 이제 아까 삶아둔 메밀면을 방금 끓인 옹심이를 잘 넣어주세요. 여기에 살짝 구은 김을 넣어도 됩니다. 저는 여기에 들깨가루를 촥촥 뿌린후 먹었어요. 맛은 생각보다 좋았어요. 싱겁지도 짜지도 않았고, 무엇보다 옹심이가 너무 쫄깃해서 좋았어요. 아마 여기에 애호박을 썰어서 넣었으면 더 맛있었을것 같아요. 한번 나중에 시도해봐야 겠어요. 이렇게 만들어 먹는데 40분정도 걸렸어요. 만드는데 30분, 먹는데 10분.. 여러분 반찬투정 하지맙시다.ㅠㅠ 음식 만드는데 이렇게 정성이 들어가네요. 그리고 가장 중요한게 있는데, 요리 후 뒷처리가 가장 중요해요. 와이프가 외출했다 들어와서 감자 옹심이를 해 먹었는지 모를 정도로 뒷처리를 깔끔히 하면 끝!
