올해 초 마르쉐에 갔다가 상당히 좋은 팥을 구매하게 되었습니다. 경남 거창에서 재배한 재팥이라는 토종 품종의 팥인데 기왕 좋은 원물을 구했으니 무엇을 해볼까 하다가 양갱을 만들어 봐야겠다는 생각에 닿았죠. 그 이후 여러 재료를 찾고 조정해가면서 나름 만족할만한 결과물을 얻게되어 그 과정을 나누려 합니다. -------------------------------------------------------------------------------------------------------------------------------------------------------------- 재료 - 팥, 설탕, 한천, 소금, 물 제가 사용한 팥 양갱의 재료는 위의 5가지로 하나씩 이야기 하겠습니다. 1. 팥 팥양갱을 만들면서 만족한 원물은 3가지 였습니다. 가. 경남 거창 재팥 - 올해 초 마르쉐에서 접해 양갱을 만들어봐야겠다는 생각을 하게 해 준 팥입니다. 마르쉐에서 구매했는데 판매 포장지를 보면 거창한국수라는 곳에서 판매하는 것으로 되어있네요. 기억이 가물하지만 구매할 때 재팥이 맛은 좋지만 생산량이 낮고 대부분의 소비자들이 선명한 붉은 색을 지닌 비단팥을 더 선호해서 앞으로 재팥을 얼마나 더 농사지을지 고민이라고 하셨던 것 같습니다. 가격: 정확히 기억 안나지만, 300g에 만원 남짓이었던 것으로 기억합니다. 현재 인터넷 판매처에서는 판매하고 있지 않지만 전화 연락을 하면 구매가능할지도 모르겠습니다. 그 외에도 여러 경로로 국내 팥을 구매했으나, 만족스러운 품질을 만나지 못해 편한길을 찾아 화과자에서 다루는 가장 좋은 아래의 팥을 구했습니다. 나. 일본 효고현 단바 대납언 팥 - 화과자의 팥 앙금을 만드는 용도의 팥으로서 가장 좋은 품질이라 평가받는 팥입니다. 여러 판매처가 있으며, 제가 인지하기에 23년 생산된 것 + 소매로 구매가 가능한 것 중 가장 좋은 품질의 물건은 아래의 판매처였습니다. 판매처명: 篠山食料品店 (시노야마 식료품점) https://www.sasayamaya.ne.jp 가격: 1kg당 4,000엔 다만 단바 대납언 팥은 떫은맛을 많이 보유하고 있어 다루기가 다른 팥들에 비해 난이도가 높은 편입니다. 흰 팥은 제가 이 판매처를 알았을 때는 23년분이 매진되어 다뤄보지 못 했고 제가 먹어본 가장 맛있는 검은 콩을 취급하는 판매처이기도 합니다. 그리고 여기서 무언가 산다면, 밤양갱도 함께 구매하시는 것을 추천합니다. 제가 먹어본 밤양갱 중 가장 맛있었습니다. 다. 일본 홋카이도 대납언 팥 - 대납언 품종의 팥을 홋카이도에서 재배한 팥입니다. 판매처는 아주 다양하며, 저는 보유하고 있던 단바 대납언 팥과 가장 외향(색, 광택 등)이 유사한 것을 찾아 구매했습니다. 가격: 1kg 당 1,400~2,000엔 내외 지금은 팥양갱을 만들 때 여러종류 구매해둔 홋카이도 대납언 팥이 많이 남아있어 그것으로 만들고 있습니다. -------------------------------------------------------------------------------------------------------------------------------------------------------------- 2. 설탕 설탕은 제가 일반적으로 사용하는 백설탕과 가격은 비싸지만 품질에 만족하는 와삼봉(和三盆) 두가지를 비교하며 이야기하겠습니다. 최근에 안달고 맛있는 디저트에 어떻게 생각하냐는 질문을 받은적이 있습니다. 그 자리에서는 과자류를 취미로 만들다보면 아직까지는 정확히 답을 하기 어렵지만, 만들다보면 정답이 있다는 것이 보이고 그것을 따라가게 된다고 답했습니다. 두리뭉실한 대답이었죠. 그 이후 내가 왜 그렇게 답을 했을까를 고민하다 이미 알고 있던것에 그 답이 있었음을 깨달았습니다. 가. 맛의 구조 비교 백설탕은 상대적으로 품질이 일정하나 와삼봉은 생산자마다, 매 작황마다 차이가 날 수 있습니다. 제가 사용한 와삼봉은 岡田製糖所(오카다제당소)의 와삼봉으로 소매 기준 1kg 약 4,000엔 정도로 구매할 수 있습니다. 선택 이유는 라쿠텐에서 구매할 수 있는 와삼봉 중 어디서 만들었는지 정확히 표기된 것을 골랐으며, 현재 보유한 물량 소진 후 타 업체의 것도 구매할 예정입니다. 백설탕과 와삼봉의 시간적인 맛의 구조차이 - 백설탕은 초반에 강한 단맛이 느껴지며, 이후 급격하게 느껴지는 단맛이 사라집니다. - 와삼봉은 백설탕에 비해 느껴지는 단맛의 정도가 낮으며, 단맛이 느껴지는 시간이 상대적으로 더 깁니다. 백설탕과 와삼봉의 물리적인 맛의 구조차이 - 입 안에서 백설탕은 혀를 중심으로 좁은 범위에서 단맛이 느껴지고 와삼봉은 백설탕과 비교해서 양옆으로, 위아래로 더 넓은 범위에서 단맛이 느껴지며 뒷맛이 불쾌하게 남는 대부분의 비정제설탕류 늬앙스가 없음. - 와삼봉도 생산자마다 그 맛의 구조가 다르겠지만 단맛이 더 촘촘하여 즐거움을 줍니다. (고운 입자로 유통되는 와삼봉의 특성에 따른 영향이 있을것 같아 분당과도 비교함) 나. 단맛을 내는 당류 중 어느것을 사용할 것인가? 절대적인 품질은 와삼봉이 백설탕에 비해 우위라고 판단하나, 그것이 절대적인 정답은 아니라고 판단합니다. 왜냐하면 단맛의 구조에 따라 결과물의 자연스럽게 지향점이 달라지기 때문에 무엇을 추구하고 타협할것인가를 판단해서 결정할 문제라고 생각하기 때문이죠. 다만, 화과자에서 더 높은 재료비을 지불하고 와삼봉을 사용하는 이유는 곡물의 맛을 와삼봉이 지닌 단맛의 구조를 활용하여 더 자연스럽게 이어 붙이고 그 매력을 잘 드러내주기 때문이라고 판단합니다. 참고로 최근에는 태국, 캄보디아에서 생산되는 팜슈가(종려당)에도 관심을 가지고 있으나, 제가 궁금해하는 품질의 물건(유기농 생산, 생산에 화학약품 미사용)을 한국에 가져오려면 1kg당 3만원 이상의 비용이 들어 그냥 알고있는 와삼봉을 주로 사용하고 있습니다. 다. 어떠한 당류를 어느만큼 넣을 것인가? 절대적인 레시피, 비율, 정답은 없다고 생각합니다. 사용하는 다른 재료들에 따라 당류를 넣는 양은 달라지기 마련이니까요. 저는 당류로 단맛을 불어넣으면, 얼마만큼 넣는지에 따라 전체 결과물의 향미가 어떻게 변하는가를 비교해서 결과물을 조정하곤합니다. 양갱같은 경우에는 팥의 맛만으로는 채우지 못하는 위치를 채워주기에 당류를 넣는 의미가 있습니다. 당류의 투입량이 적으면 맛이 충분히 채워지지 않고 지나치면 단맛이 지나치게 부각이 되곤하죠. 일반적으로 백설탕은 초반에 강한 강도의 단맛이 급격하게 치솟고 사라지기 때문에 다른 당류들에 비해 더 적은양을 넣고 그에 반해 와삼봉은 단맛의 정도가 낮으므로 더 많은 양을 투입하고 합니다. 참고로 저는 잼을 만들때도 같은 접근 방법으로 과일을 졸인다음 추가할 향과 관련된 재료를 투입 및 조정한다음 향에 대해 원하는 지점까지 제작한 후 조금씩 맛을보여 입을 향미로 가득 채울때까지 당류를 투입합니다. 결론은 어느 재료를 어떠한 방식으로 어떠한 비율로 사용하느냐에 맞춰 그와 조합하는 당류와 양이 제각기 다르다는 것입니다. -------------------------------------------------------------------------------------------------------------------------------------------------------------- 3. 한천 - 한천은 큰 고민 없이 한국에서 생산되는 밀양 한천 분말을 사용했습니다. 10월에 일본 여행가는데 좋은 한천을 접할 수 있게되면 새로운 시도를 해볼 것 같네요. -------------------------------------------------------------------------------------------------------------------------------------------------------------- 4. 소금 - 소금은 음식에서 엠프와 같은 역활을 합니다. 소량 넣으면 맛을 더 잘 느낄 수 있도록 도와주죠. -------------------------------------------------------------------------------------------------------------------------------------------------------------- 5. 물 - 생산단가를 고려하지 않았을 때 팥양갱의 최대치를 달성하기 위해 어느 팥과 설탕을 사용할 것인지는 알만한 사람들은 이미 알고 있을겁니다. 저는 한천을 제외하고는 알고 있는 것 같네요. 물론 제가 우매함의 봉우리 끝에 올라가 있을 수도 있죠. 그렇다면 끝 즈음의 일본 화과자집들의 차이들 중 재료의 요소가 더 있을까요? 저는 물에 있다고 판단합니다. 맛있는 물에 말이죠.
