1년이 넘는 시간동안 까눌레를 만들며 방법론과 재료에 대한 이해를 나누고자 이 글을 적었습니다. 기술적인 것은 반복으로 쉽게 숙련할 수 있지만, 이것을 나누면 저와 같은 길을 가는 사람들에게 도움이 될 것이라 생각하거든요. 이 글의 내용은 어디까지나 저의 경험에서 나온 판단입니다.  왜 까눌레 만들기를 선택했는가? 답1: 레시피와 재료를 고려했을 때 맛있을 것이 분명하기 때문이며, 시중에서 만족할 만한 까눌레를 먹어본 경험이 없기때문. - 바삭한 겉 껍질과 촉촉한 속 질감의 대조. - 카라멜화 된 설탕, 럼이 불어넣은 당밀의 늬앙스와 다양한 향, 버터, 우유, 계란노른자, 바닐라가 함께하는 커스터드라 할 수 있는 내부의 향미가 즐거움을 주기 때문. 답2: 만드는 것에 있어 통제가 어려운 요소가 적음. - 까눌레는 도구와 재료를 갖추는데 가격이 적지 않은 편이지만, 조리 과정 중 발효와 같은 통제가 어려운 부분이 거의 없고 사용되는 재료들의 품질이 일정한 편임. -------------------------------------- 어떤 레시피를 참조했는가? 링크: https://www.youtube.com/watch?v=97arwzOzwIY 링크: https://www.youtube.com/watch?v=MIZf31gg4VU&t=528s - 한국어로 된 레시피 중에서는 해당 영상이 지향하는 방향이 가장 설득되고 실행 하였을때 즐거움을 주는 결과물이었음. -------------------------------------- 내가 길을 가는 방향이라 할만한 것. 1. 적합한 도구와 좋은 재료는 좋은 결과물을 위한 필요조건이다. (충분조건은 아님) - 사용하는 도구와 재료에 대한 이해와 실행이 좋은 결과물을 만든다. 2. 같은 이름을 지닌 것들도 각각마다 목적에 적합한지와 품질이 다르다. 이것을 이해하고 소화하고 실행하는 것이 결과물의 차이를 만든다. - 도구: 까눌레 틀은 재질에 따라 서로 다른 것이다. (재질에 따른 열 전도율의 차이) - 재료: 동일한 이름으로 부르는 재료라 할지라도 각자에 따라 서로 다름 여름에 수박을 고를 때 왜 열심히 두드리고 소리를 듣는가? 그 수박들이 다 같다고 생각한다면 그러할 필요가 있을까? 3. 아는 만큼 나아갈 수 있다. - 모르고 어쩌다 좋은 것을 만들더라도 왜 그러한 결과물이 나왔는지 소화하지 못하면 그 순간 한번의 결과물일 뿐이다. - 무엇을 사용해서 어떻게 만들어 나온 결과물을 먹어보고 이해한 후 조정을 반복하는 해야한다. - 맛의 특정 부분에 대해 10만큼 이해하고 있다면, 해당 부분이 10이 넘는 결과물을 꾸준히 만들기는 어렵다는 것을 인정해야한다. 그래서 맛에 대한 경험과 훈련이 필요하다. ex) 마들렌을 만들 때 베이킹 파우더를 넣은 것과 그렇지 않은 것을 만들어 비교해서 먹어보면, 베이킹 파우더를 넣은것은 빵 내부가 촘촘하지 못하고 머금고 있는 향이 어색함을 인지할 수 있음. - 그래서 마들렌은 베이킹 파우더를 넣지 않고 반죽을 만드는 과정에서 믹서를 통해 충분히 공기를 불어 넣어 주는 것이 옳은 제조법이라고 판단함.  -------------------------------------- 재료에 대한 이야기. - 같은 이름을 가진 재료라도 재료의 품질과 특성이 다르며, 그에 따라서 결과물이 나아갈 수 있는 지점이 정해진다. 1. 부정적인 요소가 있는 재료를 사용하면 내부의 향에 크나큰 부정적인 영향을 준다. - 최소한 없어야할 요소는 없거나, 통제할 수 있는 재료를 선택해야함. ex) 크림을 만들 때 부정적인 요소가 아직 남아있는 알콜(숙성년수가 적은 럼주의 부정적인 이취와 거친 향미)을 사용함을 주의해야 한다. 다만, 가열하는 경우는 그 정도에 따라 사용하여도 열에 의해 휘발하여 일정 수준까지는 문제없음. 위와 같이 향미에 부정적인 요소가 있는 럼주는 에어링을 통해 관리하여 사용하는 것이 맞음. 2. 혼합물의 몸통(구조)을 차지하는 재료의 향미가 빈약하면, 다른 재료의 품질이 좋더라도 그것을 품어낼 수 없다. - 까눌레에서는 밀가루, 우유가 이 밑바탕의 역활을 하는 재료라고 판단. - 바닐라 럼을 만들 때의 경험으로 이 내용을 소화함. 같은 바닐라 빈을 서로 다른 럼에 넣었을 때, 럼이 품을 수 있는 향미에 차이가 있음. 밑의 럼 이야기에서 더 자세히 다룹니다. 3. 당류의 맛 구조는 혼합물에도 동일하게 발현된다. - 여러 재료를 혼합함으로서, 투입한 재료의 맛 구조가 다르게 변주되도록 가공할 수 있음. - 다만, 당류의 맛 구조는 결과물에서도 동일하게 발현되는 경향이 있어, 사용하는 당류의 맛 구조를 이해하고 결과물의 맛 구조를 설계해야한다고 판단함. 밑의 설탕 이야기에서 더 자세히 다룹니다. -------------------------------------- 왜 이 재료를 선택했는가? 재료: 밀가루, 설탕, 버터, 계란, 럼, 우유, 바닐라빈 -------------------------------------- 1. 밀가루: 포리쉐 45, 55, 80(통밀) 문: 한국어로 된 레시피에서는 박력분, 중력분, 강력분이라는 미국산 밀 유통망 체계안에 있음에도 왜 이 밀을 선택했는가? 답1: 밀 자체의 품질, 밀이 보유하고 있는 향미로 가공할 수 있는 요소가 더 많다고 판단함. - 품질을 이야기 할때는 맛 뿐만이 아닌 결과물의 일관성을 충족하고 목적에 맞는 가공성을 갖추었는지 등 여러 가지 요소가 고려될 수 있지만, 향미로 전환 될 수 있는 요소를 내재하고 있는지에 주된 결정요인. - 품질이 더 좋은 밀가루가 추가로 투입되는 재료의 향미를 더 품어줄 수 있다고 판단함. 크기가 다른 공간을 생각하면 이해가 쉬울것임. 답2: 미국에서 생산되는 가장 좋은 밀의 품질이 최고의 프랑스산 밀에 뒤쳐진다고는 판단하지 않지만(경험이 없어 모르기에), 한국에서 개인소비자가 접할 수 있는 유통망내에서는 프랑스산 밀가루를 선택하는 것이 좋은 품질을 접하기 더 쉽기 때문에 선택함. + 오픈마켓 검색 시 1kg 단위의 소분 제품을 구매할 수 있는점 답3: TXX 규격으로 나오는 밀가루를 박력, 중력, 강력분에 동일하게 대응하도록 사용하는 것은 어렵지만(제분회사 마다도 사용성이 다름), 경향성, 혼합사용, 글루텐 발달 정도를 조정함에 따라 원하는 결과물의 특성(질감 등)을 얻을 수 있음 저는 반죽하는 날의 온습도, 반죽을 만들고나서 굽기까지의 시간을 주된 변수로 t45 70%, t55 30% 비율을 기준으로 조정해서 사용합니다. -------------------------------------- 2. 설탕 1안: 정제설탕을 분당화 한 제품 (전분 등을 무첨가한 제품) 문: 왜 정제설탕이란 용어를 사용했는가? 답: 우리가 일반적으로 접하는 백설탕 외에도 그라뉴당이 존재하기 때문. 한국에서 적절한 가격에 소매로 유통되면 좋겠지만, 개인 소비자가 시장을 바꿀 수는 없으니 아쉬울 뿐임. 가정 수준에서는 백설탕으로 사용해도 큰 문제는 없다고 판단함. 문2: 왜 분당인가? 답: 결과물의 밀도와 질감에 영향을 줌. 전에 찾아 봤을 때 근거도 찾았지만 잊었으며, 직접 비교시험 해본 결과 의미있는 차이가 있었음. 2안: 와삼봉 (정제한 버전) 문1: 와삼봉이 무엇인가? 답: 일본에서 재배한 사탕수수(죽당)로 만든 설탕 문2: 정제한 버전이라는데 그럴거면 정제설탕을 사는 것이 맞지 않을까? 답: 현대과학의 힘을 빌린 정제과정이 아니여서 순수한 당 성분 외에도 일정량의 당밀, 기타 성분이 남아 있으며 일반 설탕과 맛의 구조가 다름. 문3: 비정제당이 많은데 왜 와삼봉인가? 답: 22~23년 기준 네이버쇼핑 검색에 나오는 모든 비정제 설탕을 구매해서 먹어본 결과 맛의 구조가 적절하지 않음. 설탕의 맛 구조는 정제당을 기준으로 삼았으며, 정제당은 처음에 분명하고 강한 단맛이 치솟고 사라지며, 향미의 길이는 짧음. 이 맛의 구조는 다른 결과물에서도 그대로 반영된다. 정말 탁월한 기술이 있다면 구조를 변형시킬 수도 있겠지만, 아직까지 나는 못함. 비정제당은 당밀 등 기타 성분 덕분인지 당밀의 맛이 느껴지는 위치에서 단맛이 다시 부각된다. 하지만 대부분의 비정제당은 당밀에서 부각되는 단맛이 해상도가 낮고 불쾌한 경향이 있었음. 그 중 경험한 유일한 예외가 와삼봉. 와삼봉은 비교적 낮은 정도의 단맛이 제법 긴 시간동안 지속되며, 그 맛의 구조는 생산하는 업체마다 차이가 있음. 문4: 와삼봉 왜 이렇게 비싼가? 이것을 사용할만한 이유가 있음? 답1: 생산비가 비싸고 일본에서 고급 화과자에 사용된다는 이미지가 이 가격을 만든다고 생각함. (일본 가격기준 1kg에 4000엔 이상, 제당 회사별과 가격차이 있음) 답2: 이러한 맛의 구조를 지닌, 다른 비정제 당을 아직까지 경험하지 못함. 이 차이에 개당 4~500원의 생산단가 차이가 있다고 판단하면 사용하는 것. 답3: 화과자에서 더 높은 재료비를 지불하고 와삼봉을 사용하는 이유는 와삼봉의 낮은 정도에서 지속되는 단맛 구조가 곡물의 단맛을 더 자연스럽게 이어 붙일 수 있는 점이라 판단함. 이것이 다른 제과에서도 적용가능하다고 생각하면 그리 하는것. -------------------------------------- 3. 버터: 여건에 따라 사용하나 선택에 대한 조건을 명시. 3-1. 라미네이팅 버터는 일반 버터에 비해 굉장히 많은 향미 손실이 있으므로 권장하지 않음. - 3종의 브랜드에서 나오는 일반 라인의 버터와 라미네이팅 버전을 동시 비교함.
